    Defrosted some lentil and veg soup for dinner. We’ve had picky plate lunch so a nice easy soup for dinner will do is. Hubby is at work this evening

    Made a veggie chilli today for in the week, plus a plum and apple crumble of which most had been scoffed.

    I had oven baked salmon with some LO veggie rice and mixed in somee peas / carrots. All very nice.

    Have made a small dent in the freezer of things that need using. Also have some salmon in the freezer that I'll prob use in a risotto to use up some stock, plus need to make some more stock as the carcasses are quite bulky in the freezer.

    Massive fat lasagne and garlic bread

    Bolognese made last night. I had a kilo of mince to use so split it into 3 portions. Frozen two so that’s two dinners sorted for a later date. I made the béchamel earlier so it’s cold. I find it’s best to assemble when all the ingredients are cold. Garlic butter is made too. Garlic bread is so cheap and easily available in the UK. I can get it here in Lidl €1.69 for two frozen baguettes or over €3 in Carrefour. I got a 35c baguette fresh today then roasted garlic, minced up and added to butter with dried parsley.

    I'm making a chicken soup, using a whole chicken (free range) daughter and husband both seem to have flu ( not covid, tests done)  
    I will have some vege sausages, mushrooms and tomatoes.

    Simple evening meal here tonight - Homemade sausage rolls, chips and beans then stewed apple and custard. We are trying to run down freezers and use up whats in the house this week,

    actually looking forward to something simple!!

    Good morning all

    my husband got a big piece of salmon a week or so ago which I froze. I’ve got it out the freezer this morning. As it’s a big piece I’m cutting it in two. I’m doing us honey, soy salmon chips and peas for dinner tonight. The other piece I will make fish cakes with. I got fresh dill and lemons today for those. That’s dinner sorted tomorrow.

  • tonights dinner will be Bacon/Chicken Onion steam suet pud ( in slowcooker) with lots of mash potatoes and home grown runner beans that l need to use up from freezer.
    dessert will be last of the banana nut bread l made on Saturday.
