    I'm making pork and chorizo bean burgers tonight. Blitz up shallot and chorizo and pan fry until the onions are soft and the chorizo is crispy, add a tin of drained and mashed up mixed beans, mix in some pork mince, add some coriander leaf, parsley, coarse black pepper and a splash of lime juice and mould into burgers. I do have some brioche burger buns in the freezer but might serve them with just salad and cut down on a few carbs.

    tonights dinner hm bacon burgers on fresh buns with chips for hubby, garden salad for me.
    dessert, finish off Irish fruit cake made yesterday.
    then prep orange and apple peel jelly (River Cottage recipe ) to strain over night to finish making/cooking early Sat morning for scones for Saturday evening high tea.

    A couple of red peppers, a shallot, some chestnut mushrooms, a handful of minced pork leftover from yesterday, and various herbs and spices = roasted stuffed peppers for us tonight.

    Was at a big posh do in the Big Smoke last night, food was surprisingly good considering they were catering for nearly 2,000 people.

    Tonight was basa in lemon and pepper with vegetable rice (yup the yellow one)
    Might have some banana custard later.

    Thanks everyone for the well wishes whilst I've been poorly, deff much better now so long as i keep on top of the medication.

    Feeling tired and lazy and craving junk. I had a YS cheese panini, OH had a YS chicken fajita and we shared YS mozarella sticks and chips from takeaway. 

    Will probably have some YS cake before bed! 
  • l dont like cooking on Saturdays but l fancy doing a little baking today. so  prepping for an old fashion high tea tonight.

    shop bought turkey slices with garden salad ,hm coleslaw ,hm potato salad
    hm old fashion herb cheese not made this before.. ( and last of herbs l can find in garden), spread and crackers
    scones with apple and orange peel jelly.(river cottage recipe)
    buttered Banana and Nut loaf ( trying it out made in slow cooker)
    yogurt orange mousse ( to use up the yogurt l made in week and the oranges l bought on sale.
