I made some sesame prawn toasts, pad thai and a fish curry.  We were away last week and had a few easy ready meals as well as eating out so it was nice to get back to "proper" cooking.

Roast pork and all the trimmings for us tonight. Pud will be apple and blackberry pie using home grown fruit, and custard using eggs from my hens.

Roast beef here, I’ll make some low carb Yorkshire puddings using arrowroot, still around 3g of carbs each, but it’s a treat 😊

Pork chops last night caught fire on the BBQ so were a tad frazzled.  I served them with large chopped courgettes and peppers fried and then added stock and some giant cous cous.  Turned out a bit risotto like so will need to figure out how to cook the giant stuff as had expected it to be more fluffy.  Prob due to me having too much stock and stirring it and having it bubbling to ensure it was cooked rather than just letting it sit and steam.

Tonight is a small smoked gammon joint with some sort of roasties.  And hopefully some veg.  I had bought a cauli to bake in a cheese sauce but have been over-ruled.  Might have it tomorrow instead, assuming we have gammon left overs.

Having braised beef curry with rice and peas.   As the curry is being done in the oven I am also making a crumble to have either this evening or tomorrow.
