    yesterday was salmon with lemon and dill, pasta salad and potato salad.
    Not sure tonight, I've chucked together a potato curry thing that can be heated as needed over the next couple of days but I'm finally back at gym classes tonight (it would seem they were the one place who had no idea classes would be able to start from 17th May so it's taken this long for them to get their finger out  :|) which means I actually need to leave the house this evening - hurrah! Haven't had a class since Dec before they shoved us in T3 / T4 / Lockdown and gave up with online stuff in Feb  so this will be a shock to the system.

    My daughter has gone Veggie so I'm making a Sweet Potato, Chickpea & spinach curry with some roasted chicken thighs on the side for me.

    Tonight we are having a super healthy salad of chilli-roasted salmon fillets and butternut squash chunks with spring onions, radishes and lettuce leaves from the garden, plus tomato, cucumber and avocado. Healthiness will be completely ruined by a side of lovely home made chips🤣

    I found a tin of mango purée in the store cupboard so have made it into mango fool (with the last of the cream, and custard made from the glut of hens eggs) for pud.

    Pad Thai using a kit with Quorn chicken, broccoli and baby corn. YS cheesecake for after  :)

    I had Chicken and ham pie with cabbage cooked in garlic and cauliflower.

    I had the last of my roasted veg with halloumi.
    Husband had chilli from freezer with packet rice. Daughter had vege chilli from freezer, with the other half of the packet rice.
    Quick dinner tonight as we were busy in the garden.

    Made this recipe for lunch and dinner so now have two balls of flatbread dough in the freezer too Asparagus, pea & ricotta flatbreads recipe | BBC Good Food. Was a bit of a faff but did taste delicious and looked very like the recipe photo too.

    OH had some of the curry i made.
    I had some reheated pasta with ketchup and grated cheese. With some doughballs before being back at the gym.
    Was so nervous I'd have forgotten everything but had a great class (i will hurt tomorrow) and so good to be back.
