Decided to have the ribs tomorrow, tonight will be a cheeseboard, we have a lovely selection of local cheeses, and a shedload of British charcuterie and various pickled veg. I’ve made some almond flour crackers and found a bottle of port which obviously needs drinking before it goes off 😜

Roast chicken dinner for us tonight, with the leftover meat being used for a chicken and mushroom pasta bake and a chicken Pad Thai over the next couple of nights. Plus the carcass will make stock for veg soup, so that’s lunches taken care of. An inexpensive week, food-wise 😀5

Huge amount of ribs going on the BBQ later, they’ve been marinated since Friday and will prep cook for a couple of hours on low to make them sticky and tender 😜 HM coleslaw and corn on the cob for DH 🌽

Some lovely meals lately everyone! has given me lots of ideas.
I made seafood pizza (LC dough) last night for DS and I.
Today I made a chicken tray bake with garlic, rosemary and lemon with green beans, diced celeriac, shallots and broccoli. So simple and quick, and so think I need to google a few versions of this as an easy mid week meal.4 -
