Wraps, with chicken breast fried in multiple seasoning mixtures (Southern Fried, Cajun, Garlic and Pepper etc), sauteed mushrooms, onion, garlic, sweetcorn, mini peppers and courgette and a bit of grated cheese. Tasty and not too heavy.

I made chicken fajita so it's Mexican food all round so far! Made enough to freeze two meals as well.
I must admit I deviated from the Mexican theme in the end. OH had chilli so it was still a fiesta in this house but I ended up with some pasta from the freezer as I wasn't really feeling the chilli love (and OH really likes it so made sense for him to have some - we still have plenty of peppers in the freezer for me to make another batch)

Tonight we’ll be having pork loins, pan fried with sliced onion, mushroom and garlic. If I’m feeling fancy, I might deglaze the pan with cider and finish with a little cream. Will be served with cauliflower cheese and green beans. Yesterday I made a banoffee pie so there is more of that to finish up for pud if wanted.

@squanderscouse welcome aboard! your meal sounds lovely and very creative.

I made homemade burgers and home made low carb barm cakes to put them in with plenty salad. Never made my own burgers before but had a glut of mince so went for it. Added dried garlic, Worcester sauce, thyme, smoked paprika, smokey flavouring, S&P, parsley and an egg to bind.
