  • @squanderscouse welcome aboard! your meal sounds lovely and very creative.

    I made homemade burgers and home made low carb barm cakes to put them in with plenty salad. Never made my own burgers before but had a glut of mince so went for it. Added dried garlic, Worcester sauce, thyme, smoked paprika, smokey flavouring, S&P, parsley and an egg to bind.

    Those burgers sound amazing - can't beat a homemade burger, so much nicer than shop-bought ones.

  • Had a roast yesterday and got a fair bit of chicken left over, so going to make creamy chicken and mushroom pasta tonight.

    Snap! We are having creamy chicken and mushroom pasta bake from leftovers tonight too, squanderscouse. I'm adding some baby spinach and a handful of frozen peas to the pasta when I cook it (it's a Delicious magazine recipe which I found online here).

    Roasted sweet potato, sweet chili and goats cheese salad.
    We had a very beige week last week :flushed: so trying a bit harder this week!

    We are away at the seaside for a few days but you cant have fish and chips every day. So I bought mozzarella, Italian deli sausage (husband) fresh pesto, tomato, ciabatta rolls and some fresh pasta. Made a packed lunch for tomorrow and made the rest into a pasta concoction. It was edible but a little bland. 
    Husband said the Italian sausage helped his.
    I bought some passion fruit and fresh cream cupcakes for afters, they were very nice.

    Had a late meeting yesterday so didn't manage to get on here to post. Had pork steaks in chilli, salt, pepper dressing from Ice-land with green beans, swede, celeriac dauphinoise, last night. today we had moussaka, salad and LC garlic bread.

    Just been out for an alfresco dinner, mushroom and ale pie with mash, followed by sticky toffee pudding and custard. Yum!
