I’m making a salmon coulibiac for tonight (with enough left for tomorrow as well). I’ll be adding some wilted baby spinach leaves to the rice mixture as I have a handful of those to finish up, and I’m cheating by using shop bought puff pastry rather than making my own. Will be served warm with asparagus and long stemmed broccoli tonight, and the leftovers served cold with salad tomorrow.
Still plenty of the Malteser cheesecake left for desserts (I’m glad I made it, it’s delicious!)4 -
Chilly and rainy, perfect day for a homemade toad in the hole with garlic roasted potatoes, greens, and gravy."You won't bloom until you're planted" - Graffiti spotted in Newcastle.

Had planned to make a meat loaf but, surprised by the sunny weather, we went for a long walk earlier, then got home and spent a couple of hours in the garden so ended up ordering a mixed tandoori takeaway with saag paneer which was lovely. Thundering, lightening and flooding now. Bizarre weather at the moment!5
