    Chinese fakeaway yesterday and I even made prawn toast in the air fryer. It wasn't perfect but a good effort though.
    Bigger lunch today instead of dinner, sausage, mash, onions and gravy.

    We are having Mexican, a chicken and pepper traybake and I have taken two chilli con carne out of the freezer, I think (and hoping) one is quorn mince otherwise I will be going hungry. 
    With some tortilla chips and dips.
  • That sounds yum, @JIL!  We’re having Mexican as well here, had some chicken marinating in an enchilada spice mix I pulled together and pairing it with some homemade pico de gallo, guac and some brown rice, with a side salad.  So nice to have light sides again now that the weather is (slightly) warming up ☺️

    I had a LC sausage roll with salad and for pudding I made a passion fruit mousse.
  • @kerri_gt - I think I probably just mean the days are longer 😁. Yorkshire isn’t exactly tropical right now either!

    My vege chilli last night turned out to be a quorn bolognese, but I ate and enjoyed it with tortillas and onion rings.

    Today I made daughter a roasted vegetable tart, husband had pork chops, I had vege sausages served with stuffing, roast potatoes (29p per bag from aldi,  fresh) which were lovely, purple sprouting broccoli, carrots, cauliflower and gravy.

    I made an apple and rhubarb crumble for after using frozen rhubarb and tinned apples.
