Went for a long walk in the gorgeous Spring sunshine and then made a Mediterranean seafood stew for tea. Had a lemon and blueberry almond flour muffin for pudding.

It's been baltic here today, went for a walk at lunchtime with OH then tried to sit in the garden for a bit when i got back, even under two blankets (one even wrapped round the back of my head) it was freezing.
Dinner tonight was a ping sweet n sour chicken with egg fried rice from a Too Good to Go bag. Definitely won't be rushing to buy that at full price. Filled a gap though.

Excavated some puff pastry from the depths of the freezer so made beetroot, feta and thyme tart from Olive Mag recipe here: Beetroot Tart Recipe With Feta and Thyme - olivemagazine and ate it with tinned sweetcorn and petits pois with some mixed nuts and dried fruit for pudding.

PS @C_J thankyou for the suggestion, I was just not in the  mood for burgers but will be one day soon, goldfinches.

Yesterday my parents in the garden came round for the afternoon. I made poached salmon, prawns, marie rose sauce, coleslaw, new potatoes, salad. Made a fruit platter with ice cream and chocolate sauce for pudding.
tonight we had a turkey roast dinner with broccoli, cauliflower, roast potatoes (for DH/DS), roast swede (for me), spiced red cabbage, gravy. Had a scone (made with almond flour)  with LC jam and cream and fresh strawberries for pudding. DS/DH had Easter eggs for their pudding!

Yesterday I was very lucky at M*rks in the morning and picked up some lovely shitake and grey and yellow oyster mushrooms and a mixed pack of root veg all as well reduced y/s bargains so I made a mixed veg slow cooker stew with those and various things that needed using up.
It smelt lovely when I staggered in through the door late in the afternoon and I ate a big bowlful with some oaty bread and cheddar to follow.
Then today I had another piece of beetroot, feta and thyme tart with a salad of courgette, carrots, sweetcorn, pea shoots, rocket and cous cous followed by dried fruit and nuts.

We had mashed potatoes and spring onion, salad and salmon.
Daughter had some friends round in the garden, they had various picky bits. It felt like we were getting some normality back, the first visitors for such a long time.

Usual Sunday roast from the pub today.  Very nice it was too although such a big meal in the afternoon does mean not a lot gets done for the rest of the day 😴
Blanched some bags of YS mixed veg and froze tonight, decided to separate out the carrots, broccoli and cauliflower rather than keep them mixed so i can use them separately if i want. Also blanched some sprouts.
