Thanks for the suggestions about how to make the potato crunch more interesting @kerri_gt, @hob_nob_bob and @rachsecret. I'll let you know how it goes.
Today was use it up day so lunch was a stir fry and dinner was vegetable soup made with shallots, oil from sundried tomatoes, garlic, red, yellow and green peppers, carrots, mushrooms, spring onions and half a stock cube. I had a slice of oaty bread with it followed by an easy peeler and I definitely know I've eaten my five today.

@kerri_gt I think it was me who mentioned the vegan oxo cubes.
We had pies, husband had steak, daughter and me had quorn and mushroom. With cabbage, peas and baby potatoes.

Well hubby definitely approves  :) thank you.
Tonight DH will be finishing off the veggie chilli - depending on how much is left I may or may not be having that too, otherwise I'll be freezer diving.

I made and froze a dish of pie filling recently - chicken and vegetables in a cream sauce. That has been defrosted and topped with buttered scrunched-up filo pastry and is baking as we speak. Will be served with peas and sweetcorn, so it'll be at least seven of our five a day :)

I made Yotam Ottolenghi and Ixta Belfrage's Cucumber, Za'atar and Chopped Lemon Salad from Flavour which I've recently picked up from the library (click and collect from the lobby).
It's absolutely yummy, I had to stop myself inhaling a second helping immediately. I ate it with steamed asparagus and an ear of sweetcorn and had an easy peeler for pud.
Here it is, it really looks gratifyingly like the photo in the book too.
