  • I made a low carb version of KFC chicken using pork scratchings instead of breadcrumbs with coleslaw and salad. Was lovely.

    We had my absolute favourite treat tea tonight, proper chicken fillet Kiev’s from Waitrose. With new potatoes, broccoli and green beans. And because it’s Saturday, chocolate fudge cake with cream 😋

    Fifth Anniversary 100 Posts Name Dropper
    Plan was Chinese chicken curry but tbh that involved too much effort  :D. It has now been moved to tomorrow night. Meanwhile, this evening was oven chips, calamari rings-oven, half a battered fish each and bread and butter.  Have left some chips to the side to eat-another chip butty later on after a couple of beers.

    🤣 darn, i was hoping no one would cotton on to my prev mention of LO prosecco.  This was actually from the same bottle,  there was more in it than I thought when i made risotto the other week so rather than drowning the risotto (or my Jan blues with flat fizz) I've kept it on hand. 
    Tonight was lasagne.  I got some meatless farm co mince RTC in Lidl and used that. There's another pack in the freezer but i won't be in a hurry to buy it again. It tended to soak up any and all liquid and turn into a kind of boglinaise puree, it was also a bit bland...had to fix that with a beef oxo which kind of evaded the point of using it 🙈 The lasagne did actually turn out ok, which is handy as there's 5 more portions and as it has a beef oxo, OH won't eat it.

    Kerri you can buy vegan oxo cubes now.  Photo from my cupboard and not the recycling this time.🤣

    It was the usual Sunday cook-a-thon here.
    Soup, vegetable with lentils and barley. Mini quiches,  a pork joint, a nut roast. Also made mushy peas in the slow cooker (just from a frozen bag) but they can then be frozen and used straight from freezer when needed.


    For dinner husband had pork, I had nut roast, daughter had a Gregg's vegan steak bake. With roast potatoes, root mash, kale, green beans, red cabbage, mushy peas, stuffing and gravy.


  • @happydenial yep whizzed them up in processor, then coated chicken in egg then dipped in scratchings and threw in the oven. 
    Tonight we had chicken roast dinner with swede mash, stuffing, a sausage, roast celeriac, spiced red cabbage, mixed vegetables. Raspberry and red currant trifle for pudding.

    Thanks JIL 🤣 i have some vegetable stock cubes (though will keep an eye out for these for sure) which i would have used but usually OH doesn't show any interest in lasagne. I must admit i have no idea how old the beef ones in the cupboard are 😳 
    More lasagne tonight....2 portions down,  4 to go. 2-3 will go in the freezer i expect, don't really want a week of lasagne, I'm not Garfield.

    Dinner was hm bacon & onion suet roll + jacket pots with grated cheese + tinned tomatoes.
