    We are doing Burns night meal here too.

    I've had shepherd's pie, pickled red cabbage and apple and almond bake and cream for pudding.

    Last night's dinner.
    Tonight I am doing a rice meal.

  • I made a lovely new dish today. Spanish fish stew which was a bit of a made up thing but yummy. Garlic, chorizo, celery, onion, diced courgette, diced carrot, diced celeriac fried in olive oil then added tin chopped tomatoes, tea spoon of smoked paprika, salt/pepper. cooked for 30 mins on low, gave a little whizz of hand blender to make thicker, but took out most of chunks to add back in and keep 'chunky'. Added pack of frozen fish pie mix, pack of frozen mussels and half a pack of prawns and cooked low and slow until fish had cooked then added some cream.

    Can't make my mind up. Was going to do fajitas but then realised that was similar to what I ate at work. Then fish pie but seemed to long to cook. Settled for lamb chops, veg and croquette potatoes.

    We had tray bakes 
    I took the vegan pigs in duvets from the freezer to have with daughters and mine, thinking the duvet was vege bacon, but it was vegan chorizo with pastry. I didnt like them at all. So our traybakes had the addition of vege sausages, husband had proper chorizo and chicken thigh. The veg were courgette, onion, peppers, olives, baby potatoes, tomatoes and fennel. 
  • I am having chicken and ham pie with swede puree, spiced red cabbage and celeriac dauphinoise and a small piece of cake with strawberries and whipped cream for pudding.
