Pasta with tomato and mascapone stir through sauce, a chopped chilli lamb kebab liberated from the depths of the freezer and balsamic mushrooms. Topped with grated cheddar.

Another portion left so may have that tomorrow,  or may have another portion of the not so lovely casserole that i keep finding portions of in the freezer 🙄

  • I made black pepper chicken last night- it didn't look like the photo here but tasted amazing: http://skinnydishes.com/one-pot-black-pepper-chicken/

Tonight will be creamy garlic sausage and onion spaghetti- a couple of leftover sausages (cooked) fried up with an onion, garlic, whatever herbs are to hand. Chuck in some cream and cooked pasta and loosen with pasta water if you need to. Takes no time at all so a useful busy night dinner (not that there are any of those right now.)
They call me Dr Worm... I'm interested in things; I'm not a real doctor but I am a real worm.

I had some halloumi fries, I really dont know why I buy them, they always come out of the oven, too soggy or too dry. Any brand.  With two portobello mushrooms and a big salad. Husband had some thinly sliced (aldi offer this week) chicken done in the George foreman, with lots of salad and baby potatoes.
Daughter who is doing veganuary had a not chicken curry with some baked cauliflower.
Tea and a bournville finger for afters.
Dog got to have a beef burger (homemade) that was found in the freezer. With her kibble.
  • Cauliflower cheese soup again for lunch today (and tomorrow it's a big batch) with a couple of cold chicken sausages for me and toast for OH.

Supper will be Sweet Potato topped shepherds pie with steamed broccoli, carrots and gravy followed by tinned peaches in juice in an orange jelly for a change from apple based things.

Lunch will be home made vegetable soup (I love soup, it feels like every spoonful is a shot of vitamins!!), and I am just defrosting a turkey and potato curry (which I made on Boxing Day) for supper tonight.

I am going to use up cooked lo potatoes + chestnut mushrooms + tomato + fried egg. I have a pack of cooking bacon in the fridge - hope to find some decent rashers in there to have as well.

  • Lasagne and salad with a few crackers and cheese.

@JIL totally agree re halloumi fries. Mine come out either soggy or 'break your teeth' hard. Would love to know a good recipe for these.

Cheese burgers last night. I had veggie ones because I wanted to try the new birds eye ones. They were nice.
