Husband cooked. He made cottage pie  quorn mince for me, broccoli and broad beans.
    It was lovely.
  •  Two big sandwiches made on bloomer bread. I had bacon, cheese and avocado in mine. And a bowl of beans.

@rachsecret this is the mincemeat recipe
Home-made Christmas Mincemeat | Recipes | Delia Online
I used flaked almonds and crushed them roughly in my mortar and they give it a really nice texture. I also didn't have the right sort of mixed peel so used what I could get and although I can tell the one in the recipe would be even nicer what I've made is still delicious.
Just had dinner of blackbean chilli, brussels sprouts and carrots with sour cream and chives and lime juice and am now going to get baking so will count tasting as pudding for tonight.

I have baked a leek and ricotta tart (leeks from the garden, yay!) which we will have both tonight and tomorrow night, with a jacket potato and some salad. I have also made a black cherry, cream and white chocolate meringue roulade for puds this week - I'm very pleased with how it's turned out.

    Husband cooked again
Chicken casserole, jacket potatoes, broccoli and green beans. He  made me salmon instead of casserole.
  • @goldfinches thanks for the recipe! I have bookmarked it for next year.
I had chicken parmigiana with roast veg (courgette, shallots, broccoli, mushroom and peppers. Also had a mince pie for pudding.
  • I have failed at my first attempt at mince pies as I was not brave enough when adding water to my pastry. I added it in teaspoonfuls and got to the stage where it would just stick together if I pressed it carefully into a ball and stopped there.
As a result after chilling I had dreadful difficulty rolling it out, it kept splitting and the circles were too delicate to flex into the tins when I spooned in the mincemeat. I couldn't reroll the pastry at all so ended up doing crazy patchwork tops and hoping for the best.
I baked it very despondently expecting the worst and then was pleasantly surprised by the taste which was really good.
However they looked awful and not sealing the mincemeat inside the pastry case spoils its flavour due to the high oven temperature and where it came through splits on the bottoms it welded to the tins so......I bought more plain flour today and will have another go tomorrow.
Anyway to give you all a laugh, here is what came out of the oven.

I had an apple for dinner as it was all I could fit in!

Goldfinches those pies look very creative, well done on your first attempt, baking is all about tweaks and learning, I'm sure we've all had some disasters in our time and those are far from a disaster (I've seen worse on GBBO). No one gets on a bike for the first time and cycles the Tour de France. Glad to they tasted good..its all about the taste,  no point in all style and no substance when it comes to food.

We went Christmas shopping, stopped off on way home and bought fish and chips which we ate in the car. They were delicious.
