Sliced courgette, celery, green pepper fried in a little rapeseed oil, chickpeas, diced potato, sliced carrot, soya mince and a jar of balti curry sauce, served with brown rice. Dark chocolate soya dessert after and a coffee.3

I had beetroot, tuna, boiled egg, cress, tomato and avocado.
Husband had sausage, egg, chips and mushy peas.
Daughter had vegan chicken and mushroom pie, chips and mushy peas.3 -

Normandy pork and cider casserole made in the slow cooker, with rice/mash (haven’t decided yet!), broccoli and cabbage. Will add mushrooms and spinach to the casserole half an hour or so before serving.Books read 2023 - 49/753

Made a gorgeous new recipe: Brazilian chicken peanut curry which was a bit of a mash up between two recipes online: lots of peppers, cumin, cinnamon, coriander, garlic, chopped ginger, onion, paprika, chicken thighs, lots of crunchy peanut butter, fresh coriander, tin tomatoes. Gorgeous and definitely a keeper. Served with cauliflower rice. Got four more portions to freeze too.5

Just had veggie sausage, marrowfat peas, chopped toms and a baked potato topped with sunflower spread, black pepper and nooch. HM lemon coconut cake and a coffee after.

Scampi, mash with chives and beans tonight.

We had takeaway fish and chips. We ordered mini fish, but in husbands package (mine had salt and vinegar) he had two fish!!
It was really nice tonight, beautifully cooked.2 -
