    Tonight I'm making a harissa chicken and veg thing : diced boneless chicken thighs pan fried with diced onion and potato, sliced mushroom, cauliflower florets and French beans with some harissa paste mixed through towards the end. It's quick, easy and really tasty! I'm particularly pleased because the chicken and mushrooms were RTC half price and everything else came from the garden - plus it looks like there will be enough to feed us both for two nights, yay!
  • Was supposed to be a roast beef dinner, but I absolutely can’t be bothered with the faff, so we’re having spaghetti and meatballs instead 😁

    Vege chilli just been consumed. Made a big pot last night thinking it would prob be good for today. All of your 5 a day in one bowl, onion, beans, carrots, lentils, celary, tomato and pepper all included.  Had a bit of an issue as I had no dark choc but used coco powder instead.

  • Roast leg of Welsh lamb for us tonight, with roast potatoes, carrot and swede mash, cabbage, broc, yorkshires, mint sauce and gravy. Pud is a yellow sticker roly poly with some custard.

    Going to make curry and rice. Will use some diced beef, mushrooms, onions in Chinese curry sauce.

    We had vege toad in the hole, requested by daughter, husband had a small gammon joint, with roast potatoes, parsnips, root mash, broccoli, green beans and gravy.
    I tidied up the fridge and made soup for lunches as well as a nut loaf, which I froze in portions. Also made a tea loaf and a beef and mushroom casserole which will be dinner on Tuesday as well as four other portions into the freezer.
    The only downside was the amount of washing up!!

    Pizza from the freezer! I had a bit of garlic bread too, as I have saved some pizza for lunch tomorrow. 

    Later we're having banana and butterscotch pudding with clotted cream ice cream. 
  • Lunch today will LO roast beef with veggies from yesterday’s roast dinner. Dinner tonight is chicken curry and rice. Quick and easy to make as I shall be cooking it before work

  • I am cooking leek and potato soup for lunch. 
    Dinner will be prawn and salmon stir-fry. The salmon is from frozen range 3 for £10 mixed choices. I got salmon, trout and a white fish can't remember which. You get few portions in each pack-great value.
  • Lunch will be weekend leftovers from the fridge (one portion beans on toast, one tomato pasta). Dinner is butter chicken curry with turmeric rice and possibly a side of saag aloo if I get round to it - have lots of potatoes to use up.
