I made a vege toad in the hole, using the vegan Richmond sausages, they were surprisingly good.
Husband had some roast pork with a small portion of the vege toad.
With roast potatoes, gravy, broccoli, mushy peas and carrots.
I made some soup for lunches and the leftover veg and broccoli stalks went into that. Wonder if the others will notice 🤫

I do this with mince as well @C_J , with a 500g I make a beef ragu packed with veg, dirty cajun rice and a chilli, its amazing what adding a few extra vegetables can do and you don’t feel you are missing the meat

  • I made a new culinary invention using leftovers! Sunday dinner wellington using fat head dough (low carb pastry) It had sausage meat, chicken, gravy and a bit of low carb stuffing. Will defiantly make again...maybe with leftover turkey after Christmas!
