lI had a 'use up what's in the freezer item'; HM batch cooked lasagne with salad and broccoli coleslaw. Had peanut butter cheesecake for pudding.2

We had m&s plant based kievs, jacket potatoes, mushrooms, tomatoes, corn on the cobs, coleslaw and rocket.
Meat eaters had rump steak.
Lemon cheesecake for pud.4 -
Tonight we had a small meal of veggie sausage, mash, sweetcorn and broccoli to leave room for HM apple and berry crumble with HM custard.3

DH is playing football tonight so we will have reheated leftover pulled pork chilli when he gets back. Will probably do the kids pesto pasta with extra veg after school.Books read 2023 - 49/752

Hi - first ever post (need to sort my fat debt out). I made a roast dinner yesterday and today I had a leftover chicken sandwich for lunch and I made enough for a roast dinner tonight too! I dont know why I never thought of cook once eat twice (or thrice in this case)3

I've had a busy day cooking (in between work Zoom calls!) today. I've turned a 750g pack of minced beef into a number of meals for the week -
A handful of mince fried with diced red onion, mushrooms, garlic, herbs, cold cooked rice and some grated mozzarella and cheddar, and used to stuff four red pepper halves. That's for tomorrow.
Half the remaining mince has been flavoured with curry paste and spices, stretched with a bit of grated carrot, and with the addition of a small beaten egg turned into a frying pan full of small spicy meatballs which we will have tonight with cumin spiced carrot mash and some peas.
The last of the mince has been stretched with some red lentils and turned into a bolognese sauce which I will use in a pasta bake later in the week, with a white sauce and some grated cheese topping. That will easily feed us for two days I think.6 -
