I'm thinking of having a Quorn stir fry tonight with carrots, broccoli, sweetcorn, cashew nuts and pineapple. I don't have any peppers annoyingly.

I’m roasting sausages, potato chunks and tenderstem broccoli in some kind of balsamic glaze (depends on what’s in the cupboard!) for dinner tonight.

Was going to have salmon again but in the end opted for quick and easy sausage casserole with yorkshires from the freezer.
