Tonight, it's a duck egg, fried in duck fat, with Good Life falafel with lemon and cumin (14 for 1.70 from Iceland. 2.7g carbs per falafel, oven baked. Gluten free, vegan, no added sugar and no nuts) Birds Eye Green Cuisine veggie fingers also from Iceland 10 for £1. Plus last three  of box of limited edition 6 lamb and mint koftas from Iceland.  Only a couple of nasties, 2.75 for 300g. I predict kids will love these on the BBQ this summer. I don't eat rice or couscous, but if I did, falafel, lamb koftas and either of these would be a good lunch for homeschooling kids with a bit of Middle Eastern geography thrown in.

Today will be either jacket potatoes with tuna and salad, or HM baguettes with sausages from the local butcher (freezer stash) and slow cooked onions, whichever one we don’t have will be for tomorrow 👍

Morning, tonight will be seafood paella. I would love to say I am making it from scratch but that would be a lie. I bought one of those paella mix in a bag from L1dl and will just add a bit of extra seafood as they don’t give very much. I bought a seafood mix at the weekend but will only use a third of a bag. I aim to use a bag over 3 meals over the course of the month.

Klew- they are just caramelised onions,  to go with hotdogs and sausages, I just peel, halve and finely slice as many onions as you think you’ll need, add a little oil and butter to a nonstick pan, let that melt on the lowest heat, add you onions, salt, pepper and a spoon of brown sugar, stir to cover and break up the onions, then leave on low for around an hour depending on how many onions you’ve used - stir occasionally till they are very soft, and sweet.

Lovely lunch of grilled tomatoes, scrambled egg with some smoked salmon.  Dinner tonight is a ham salad with some jersey rolls, the ham joint is in the slow cooker and smells good, making me feel quite hungry.  It’s a decent size joint so shall use some for tomorrows dinner too, I’ve still to decide what have it will tomorrow maybe some cauliflower and broccoli cheese.

Morning all. Lunch today will likely be a frozen pizza with salad. Dinner is pork chops and veggies.  Just about to marinade the chops for later. Was debating a small HM potato salad.
