Morning, a very early start for me this morning. Awake at 4am. Tonight we are having spatchcock chicken with a Nando’s marinade. I have marinaded it and letting that just sit for a few hours in the fridge to really infuse the marinade. This will be accompanied by root veg mash or salad for those who prefer cold. We may have jelly and custard for afters if I get round to making the jelly. Have a good day

Im going to marinade some chicken before I take the dog out, marinating in honey, soy and balsamic to make SW sticky chicken. Its delicious with salad. Salad will be mixed leaves, coriander, cucumber, grated cheese and carrot, peppers, cucumber, sweetcorn and coleslaw. Its going to be this all week really, proper salad weather, so it will be served with turkey burgers then roasted gammon later on in the week. Theres also a big fruit salad to pick on in the fridge mmm.

leftover chicken wings and microwave rice for lunch.
Chicken drumsticks from Ldl...coincidentally,  they have been marinaded in something or other, can't check as I threw packaging out when I separated them for freezing. Was a massive pack, but YS. Have with mash and a side of spinach (bit past its freshness), tiny plum tomatoes from the market and mushrooms.

Supper on a Monday is often a whatever didn't get used up at the weekend meal, so I've got haggis from Scotland, plus a few lamb and mint koftas and chilli beef koftas from Iceland.
