    Tonight I fancy a hot meal after having salads all week so thinking chicken fried rice to use up stocks, it will def involve chicken. Lunch today, soft boiled eggs and buttery toast mmm

    I was going to go shopping after work, but huge queues, so will make do for the next couple of days 🥴

    fridge clearance tonight, jacket spuds, with salad, coleslaw, topping will either be beans and grated cheese or tuna mayo

    We'll be having more of the never-ending chicken this week. We had roast chicken on Sunday, and the leftovers were used in special fried rice on Monday and Tuesday. Tonight even more leftovers are being turned into fried tortillas topped with refried beans and melted cheese covered in shredded chicken in a lime and coriander marinade, avocado, lettuce and home made spicy salsa. I'm simmering the carcass now, and there are plenty of meaty bits still on it so we'll have chicken and sweetcorn noodle soup for lunch tomorrow.

    Hi all,
    Was very busy the last week so did not post.
    There was nothing interesting though,to be honest!
    Tonight we are having Aldi wild mushroom & truffle ravioli with creamy spinach sauce
    Love these, from Aldi, always good fridge item (lasts a while in the fridge!) for when you need quick tasty filling meal

    Tonight we had asparagus and pea risotto with plenty of parmesan. Twas delicious.

    Brunch was an aldi maccy d style pork patty in a toasted muffin with scrambled egg.
    Dinner was Aldi spinach and ricotta tortellini.
