We'll be having more of the never-ending chicken this week. We had roast chicken on Sunday, and the leftovers were used in special fried rice on Monday and Tuesday. Tonight even more leftovers are being turned into fried tortillas topped with refried beans and melted cheese covered in shredded chicken in a lime and coriander marinade, avocado, lettuce and home made spicy salsa. I'm simmering the carcass now, and there are plenty of meaty bits still on it so we'll have chicken and sweetcorn noodle soup for lunch tomorrow.4

Had last nights left overs of pasta salad and a chicken goujon for lunch.
Just been shopping and picked up two whole chickens from hot food counter, reduced to £1 each. They have been divided up for freezer, with some left for now. Anyway, chicken, cheese and avocado toasted wraps for dinner for me and OH is putting coronation coleslaw in his instead of avocado.5 -
