CJ I do the same as you but chuck in some dried mixed herbs and leave it overnight so they're nice and soft the next day. Yum.

CJ that is my potato salad to a t!🤣 Why mess with a perfection.
Today for lunch I think we'll have garlic flatbread with mushrooms and for tea chicken stir fry noodles.
I had craving for these for days.5 -
I grated a bit too much carrot and cheddar for yesterday's salad lunch, so I am going to add some grated potato and onion to that and make some fritters for lunch today.
I'm in a quandary over tonight's supper - it was supposed to be pizza from the freezer with extra added toppings depending on what was in the fridge, but there is unexpectedly still a small amount of the pork and mushroom in cider cream casserole left. If I top this with mashed potato it would just about make enough for a small two-portion pie, and I can pad it out with lots of veg on the side. But can I get away with serving the same main course three nights in a row? Mister CJ likes variety in his evening meals, and may pull that face. I don't really want to freeze it, as it would take up valuable space. I certainly don't want to waste it. I also want Mister CJ to be happy. What to do, what to do? Stay tuned, folks!3 -

CJ - I try not to have the same carbs on consecutive nights, I try with protein too, but that’s a bit easier to ‘dress’ different, ie roast chicken one day, chicken curry the next. I also try not to serve wet meals consecutively, but have gone against that today, we had curry and rice last night, and having chilli and nachos tonight - Hubby does moan if there is too much spicy food in a week, cas he’s a chilli wimp 🤣🤣Note to self - STOP SPENDING MONEY !!

last nights steak was lovely, burgers, brioche and salad tonight, my garden sofa arrived would be nice if we could get out for tea but clouds are debatable4

Thanks, IM - I try and vary the carbs (including several low carb days every week), and I really like your idea of not serving wet meals consecutively, I will bear that in mind for future menu planning (thank you). I'm usually pretty good at varying our evening meals, but sometimes there's just a glut and repetition can't be avoided.
I've explained the predicament to Mister CJ who says he doesn't mind - the pork in cider was nice - but as compensation he has asked me to bake a lemon meringue pie for dessert. He's a boy who's keen on his puddings4 -
Just made some tomato soup using a fresh tomato, some passata, the last of a tin of plum tomatoes and a bit of tomato and basil pesto. it was really nice. Enjoyed with two waffles.
Will finish the pesto tonight with spaghetti, bacon, spinach. Might have garlic bread with it.3
