Tonight I’m making a creamy veg curry - it’s a delicious recipe containing green lentils, roasted sweet potato, roasted cauliflower, baby spinach and coconut milk. To be served with a pouch of ready made pilau rice and some mini cook-your-own poppadoms from my larder stores.5

Carrot and coriander soup for lunch with a hard boiled egg for me and a sandwich for HWK and supper this evening will be some ready made pouches of vegetable curry and rice that I re-discovered when I tidied cupboards yesterday. I've cooked some prunes, dried cherries and raisins together (prunes had been in a jar for ???) for a compote which we'll have with a spoon of Greek yoghurt.4

Breakfast is muesli with extra nuts, flaxseed, raspberries and yogurt. Lunch will be the fish fingers and baked beans, and DH is making curry tonight.Spend less now, work less later.5

We are a night late, curry night tomorrow for us.For lunch today we had a sun dried tomato and mozzarella pasta salad and it’s such a lovely day here that we ate outside sat in the sunshine. Dinner today is a Chinese pork served with noodles and stir fried veg. Blackberry and apple pie with ice cream to fit in at some point too.Well Behaved women seldom make history

No curry for us here!
Lunch was the rest of the parsnip and apple soup with some cheese and crackers. Dinner tonight will be some minted lamb chops from the freezer with roasted red onion, sweet potato, courgette and peppers, followed by the last of the crème caramel and the last of the raspberries.

Spring rolls for lunch. Dinner is, well I am not sure what to call it, but kind of resembling a chilli, except the meat isn't mince, just going to be chopped up chops in passata, with butter beans and veg from one of those ready made veg packs you can get, with tomatoes, peppers, corgettes in it which has been in the freezer. I'll put in some frozen mushrooms too now I am thinking about it. Got a bag of chilli flakes will put a little in as well. Not sure whether to have with rice or some frozen roast potatoes, am trying not to ''waste'' rice unnecessarily at the minute, if I have a possible alternative. So, a little bit random tonight,but I am sure it will be tasty, hopefully.
There is half a chocolate orange veinetta to be used up, maybe tonight is the night.5 -
Lunch today was leftovers from sausage stew from last night. No sausage in the stew anymore as my OH had 4 last night, but I just had the sauce which still had some butterbeans in it on a bread.
It was almost posh beans on toast🤣🤣
Tonight is eitherTesco ham&cheese, or spinach&ricotta tortellini, but not sure what sort of sauce to make with it!
Other then just normal cheese white sauce for the ham&cheese, I cannot think of anything!
Although my OH eats cheese by pounfs since we are home, so I am sure he would appreciate it5 -
We didn't have curry in the end . DH made spaghetti bolognese. And lunch was fish finger sandwich. I'll have the beans on some toast tomorrow.Spend less now, work less later.7

Typical, warmest day of the year and we are having beef stew and dumplings lol
In my defence, this is NI, we don't do warm weather at the best of times and I did have to scrape the car this morning
We seem to have piles of braising beef in the freezer and I need it gone7
