    Today we are having roast beef, roast potatoes and parsnips, green beans, tender stem broccoli, carrots and Yorkshire puds.  I know there will be plenty of beef leftover, still deciding what I am going to do with it, possibly something simple like cold beef, chips and peas or I am wondering if maybe to make a veggie stew in the slow cooker, dice the beef and add it near the end of cooking time with some dumplings.  

    Hope everyone had a good as weekend as we possible can given the current circumstances.

    Tonight I cooked some pasta and used up an open tin of tomatoes,  sliced up some hotdogs and chucked in some frozen spinach. Oh, and tons of mozzarella. Twas very nice too after a weekend of tidying and sorting the garage, dusting off the patio furniture and painting some of the exterior woodwork. Looking forward to work tomorrow for a rest  :D

    Roasted Mediterranean veg, pasta and DH had the last of the sausages from his trip to the butcher's the other day.  I'm a bit proud of what I had though...  I made too much filling for my freeform pie yesterday so I took half of the leftovers, mashed it roughly, formed into two little patties, dipped in flour, egg and breadcrumbs and fried them.  Smokey veg cakes!  They were gorgeous.

    N2D4 - were having roasted med veg spaghetti tonight 👍

    DH hasn’t realised it yet but that’s 3 veggie meals out of 4 👍 not that he’s adverse to veggie food, just not on our normal meal plan pattern.
    Note to self - STOP SPENDING MONEY !!

  • Lunch will be carrot soup which I shall make this morning with an egg for me and toast for HWK and supper this evening will be cold lentil and cheese loaf with a reheated jacket potato and a nice big salad and.....finally.....the last of the everlasting crumble! ta dah!

    I'm having fish fingers and baked beans for lunch.  Not sure what DH is planning for tonight.
