I'd be tempted to mix the vege haggis mince in with some mashed potato, and pan fry it as little spicy potato cakes kerri.5

Good good morning folks, hope everyone is safe and well.
We have just had some poached eggs on toast for lunch, tonight it is chicken and noodle stir fry and we have some frozen mixed berries defrosting to have with a scoop of yogurt at some time.
It’s strange I always thought we were a low waste family and compared to many I expect we are, however, this crisis has made us realise how much better we could have been at it. If there is one small positive I can take from this, it’s I have become much more resourceful, inventive and reduced waste even more than normal.Well Behaved women seldom make history

I was thinking the exact same thing yesterday, mrs motivated. I didn't think I wasted much, if anything, but it's dawned on me that there are certainly areas in which I could improve. Yesterday I made cauliflower pakora for lunch - I tend to make a good amount of batter from gram flour and lots of spices, to ensure the florets are well coated before frying them. Normally I would have just washed the remaining batter down the sink, but it was a generous mug full so I quickly made a few spicy pancakes for the freezer instead. I'll use these as wraps for some veg curry, which will make a nice lunch one day next week.
It's only a small saving, but it all adds up! I am really mindful of every morsel now that I am trying to make things last twice as long5 -

today is chicken and broccoli stir fry with noodles, don’t have any spring onions, and I’m certainly not going to the shop just for them, so standard onions will be fine, no coriander either, but hey ho.
It seems like a lot of people are cooking from scratch more, which is fab, I’ve been asked for Meal ideas for bits and pieces twice at work this week, Both from people who’s idea of cooking is piercing the plastic film - they know I’m a food freak 🤣
Did you see the pictures in the papers of the food waste? - shocking 😳 How awful that people are so scared they didn’t give any thought to what they were buying, just that they had it - I hope some big lessons are learned xNote to self - STOP SPENDING MONEY !!

I really needed something of huge comfort today so hit the corner shop ( 1 in and one out ) to get some Pappy's Sodas. Those of you that know of Northern Irelands love of a filled soda. Well Pappy's sodas are the king of sodas up here in North Antrim, they are the size of a saucer and as light as a feather, nothing like those supermarket things you can get. So Brunch was filled sodas, two rashers, two eggs, and a bit of black pudding, absolutely wonderful
Tonight Im making turkey lasagne and salad. its a lot lighter then beef lasagne and there will be loads left over for my work lunches the rest of the week6 -
Lunch today was grilled bacon and tomatoes with mushrooms from Monday's veg box.
Dinner will be a jacket potato with the remains of yesterday's bolognaise sauce. My date and walnut loaf cake from yesterday ended up rather dry as I'd substituted some of the gf for self raising but it's fine with some butter on it!

Tonight i had cauliflower with courgette, sweet potato fries and fish fingers...nearly a grown up meal lol.
Freezer needs a bit of sorting, its kind of all over the place which means i can't really think whats in it clearly. There's a large ice cream tub taking up a lot of space with only a bit of ice cream in it, but i don't want to waste it eating it for the sake of it IYKWIMFeb 2015 NSD Challenge 8/12JAN NSD 11/16
