Busy working so pinged a portion of chilli from the freezer and had some instant mash with it.

OH had mushy peas on toast before going to watch the football.

Fridge is looking a little on the empty side so I really need to come up with a list so I can use up things we have in rather than just buy new stuff entirely ...if that makes any sense?

Another oven meal tonight, pie and chips.

The building work is coming on, but easy meals are still needed, ping meals are convenient and quick, but how on earth to they manage to be so bland and salty, I am missing cooking proper meals.

Having building work is so messy and stressful, but it will be lovely when it is all finished. Just hang onto that thought! I had waited a very long time for my kitchen to be extended, but couldn't believe how six weeks of chaos brought me to the verge of tears. The dust from the old lath and plaster ceiling being brought down kept appearing for months afterwards, I had to provide meals for four out of a makeshift kitchen in the dining room, had to wash up in the bathroom, and I swear that the man who runs the fish and chip shop thought I fancied him because I was there at least twice a week. It was all worth it though :)

I cooked lots of stuffed red peppers last night so we will finish them up this evening. They were delicious.

Three years ago we had the kitchen, bathroom and downstairs loo all refurbished at the same time. Never again.

Lunch will be beans on toast. DH is cooking paella tonight.

  • Soup and pudding for us tonight - Broccoli and Spinach soup with rice pudding for afters.

"Easy" night with us this evening - soup & toast! I must remember that factoring in a night like that each week makes for a longer evening as it takes so much less prep time than cooking a meal. (Mind you last night was bolognese from the freezer so that pretty much only took as long as it took to cook the spaghetti!)

  • Tonight is a cheat night - I'm briefly back in the UK and can't justify buying lots to cook from scratch.
So fish pie, with sugar snaps; cheesecake to follow. Courtesy of M&S and their dine in deal.

With my lovely neighbour for company.
