  • With the ladies out of the house late night shopping or something..... I've decided some strips of pork belly off a big old slab* is the way to go.

Found a recipe in "Copenhagen: Cult Recipes" page 166. for 'Stegt flæsk' or pork belly with potatoes. Basically fry the pork belly till dark and crispy accompany with boiled potatoes and parsley sauce. Was rather delicious!

    *making bacon tomorrow.

Cauli cheese with some baby pasta shells mixed in, white sauce was a little thin but it was late and I CBA fixing it properly. Was fine with plenty of cheese in it and will be ok for reheats which I find can end up a bit dry.

Had a vegan sausage roll with it too.

OH had mash, beans and something...I was still working.

Haven't even really thought about a big food shop yet. We need some fruit and a few bits but really Xmas day is only a few weeks away and obviously there will be tons of left overs then, plus snacky things before Xmas so just going to try and keep to small top up shops until then.

I need to clear at least one freezer drawer in time for the influx of Christmas food, so from the freezer stocks it will be home made beetroot and red chilli burgers with chips and salad tonight.
  • Dinner today for me is a late-lunch out with friends at the local Toby Carvery. OH is having beef Olives with veg and chips.
