I prepped a chicken, leek, carrot, onion and potato stew earlier and have just taken the thighs off the bone and returned them to the stew.
It smells good and will hopefully do us for the next few nights.
  • Parboiled cubed potatoes, steamed cubed butternut squash. Drained, put in casserole dish with some spinach from the garden and mixture of double cream/ milk mixed with mild curry spice.Baked in the oven until liquid absorbed. Delicious and veggie ( reminds me of potato dauphinois)

Turkey meatballs in tomato sauce for kids. Thigh mince, egg, bread soaked in milk, browned onion and seasoning. Mixed together and formed meatballs
Tomato sauce: chopped tomatoes, browned onion, carrot and celery, lump of muscovado sugar, salt. Boiled until veg got soft, liquidised, added a splash of double cream.
Poured tomato sauce into casserole dish, dropped the meatballs and put in the oven with the lid on. Served with spaghetti and sprinkle of cheddar cheese.

I really don't know what I'm doing for dinner. I pulled out some chicken breasts last night so I've just seasoned them and put them in the slowcooker. I'm just not sure what I'll do with them when they are cooked.

    Hi all,

I’ve been on my holibobs. Very pleased with myself, as only put on 3lbs and ate and drank exactly what I fancied whilst away. The rest will probably appear next week, but hey ho ;)

Got a grocery delivery today, making pork steaks in a mushroom, garlic, thyme and red wine sauce with a little brown rice.

Oh and a slug of LO red wine. Ready to decant and freeze tomorrow.

We are having "chicken on the bone" as my kids call it and I'm doing potato skins with the extra baked potatoes I made yesterday and corn on the cob on the side.
