    There's been Chinese, picnics, n=brunches out this weekend so im kinda looking forward to normal eating resuming!. :j Making a big ratatouille type dish tonight which will last a few days and it will be served with whatever meat comes out the freezer first. Lunch today will be soup and toast – minus one when out with the dog this morning! :money:
  • Last of the corned beef + beetroot patties with spinach, onion rings and last mini corn which I will have at lunchtime to see if that is a better time to eat. Last of hm veg soup & toast for tea. Tomorrow will have sandwich with last of the corned beef and beetroot so thats all gone and think I will have some chops from freezer, not sure what time toeat as yet. Looked in pantry and have some veggie mince, ages old, so planning on putting in sc with some real mince and a jar of maybe chilli or similar with assorted beans/onions/whatever. Am in a "using up" mood. Will cook overnight on Wednesday so will eat on Thursday and also freeze. Of course, a lot of this may change but it is a plan !!

    Using up some of the freezer "ready meals" at the moment. So tonight's dinner will be a lamb, chickpea and vegetable tagine which I made with some of the LO lamb at Easter. Will just need to reheat it and make some herby couscous to go with it.

    Sweet chilli vegetable stir fry tonight - bit noodled out from the noodle lunch yesterday but OH enjoyed it so can't complain.

    Made some chicken stock earlier as planned so that's chilling in the fridge so I can scoop the fat off the top before freezing later / tomorrow.

    Celery, sweetcorn, courgette, mushroom and garlic fry lighted and then I added a tin of chopped tomatoes and let simmer away, had with pork steaks and was delightful whilst using up veg that needed to be used. Probably be nice blitzed into a soup too. Lunch today is cheese and broccoli pasta n sauce (lol) and tonight LO veg mix with some sort of meat and jersey royals :o

    Doing a sort of KFC with some chicken thighs will have with some HM oven chips & baked beans. Will have a look in the freezer to see if I've got any mini corn on the cobs as well but don't think I have and not going out to get any!
