The Smoked haddock risotto was yum, and enough left for my work lunches for 2 days next week
Tonight will be big daddy (from Aldi) steak with Dauphinois potatoes and tender stem broccoli - the steak was intended for the BBQ but it’s way too cold for that - profiteroles for pudNote to self - STOP SPENDING MONEY !!

Dinner tonight is piri piri chicken with wedges, salad and coleslaw. May also serve sweetcorn. Apple pie and custard for pud. Nothing cooked from scratch except the chicken and that's in a bag. Cba today lol"It's hard to be a diamond in a rhinestone world"0

I made chicken Korma with rice and naan bread it was lovely.
I bought 3 trays of pork chops and 3 cauliflowers in Tesco this afternoon, so we'll be eating those till we move :rotfl:0 -

Since the demise of aldi vegan burgers (despite all the hooray with their release in Dec/Jan :mad:) the meatless farm co burgers are the nicest vegan 'non-vegetable' tasting burgers I've found.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

We had noodles with beansprouts and onion in a soy dressing for lunch, had I realised how much there was, I'd have prob saved the noodles for a proper stir fry. However I did use up an egg in mine which I'd accidentally cracked the yolk when about to poach the other night.
OH wasn't hungry come dinner so had toast and spaghetti. I had some chicken casserole that I made the other night. Was a bit worried initially as it looked quite mushy, but was actually where the stock had cooled and gone slightly gelatinous. When heated it was lovely ...which is good as there's another 4 portions! (One minus an actual chicken piece but it has more dumplings in it). Also heated up some Yorkshire puds. Have finally admitted defeat in trying to make my own, at 50p a bag, Aldi can make them for me and I'll happily reheat.
Got two more chicken carcasses out of the freezer to make stock in the casserole pan tomorrow before washing it up, that way I can loosen anything slightly stuck to the pan, plus make the most of any flavours from cooking the casserole....well that's the theory anyway.
