    I have pulled out a vegetaian cottage pie and a red lentil lasagne from the freezer. Both hm ready meals. DH and I will fighting over them later.lol

Have some onions and swede to use up so might make some kind of casserole at the weekend. Ohhhhh...I have HM chicken stock....could get some chicken and do a chicken casserole, haven't done that in ages.

    Need the advice of you lovely lot....I seem to have red onions not white....would these be ok to use in a chicken casssrole or would they make the flavour weird? I tend to 'cook by colour' which sounds odd I know but I usually find ingredients of complimentary colour work well together so I'm not sure if purple / red onions would go well with chicken, swede, potatoes and carrots?

    Yesterday we had spaghetti carbonara with flatbread.

    Today, chicken stir fry with black bean sauce. Used up a lot of veg that was looking sorry for itself!

    I often substitute red onions for white if that's all I have. I don't think they'll make the casserole taste weird. Red onions are a little bit sweeter than white so might need a more salt and/or pepper.

    Fab, thank you. Trying to use things I have, esp for the likes of a casserole, rather than buy more. :money:

    Joedenise - I agree, the red onion will be fine :)

    Tonight I’m using a YS rotisserie chicken I got for a quid and shoved in the freezer, to make chicken and broccoli in oyster sauce with noodles, the bones I will chuck in the SC for stock for chicken and sweet corn soup for next weeks lunches.
    Note to self - STOP SPENDING MONEY !!

    I never seem to be able to pick up bargains like that Islandmaid. Seems to be mainly "junk" food if anything when I go shopping, although have occasionally picked up half price meat or fish.

    im just feeling totally uninspired food wise today. had a dicky tummy last night so thats probably why, im thinking a tin of soup at lunch. late home after a hospital appointment tonight so im thinking if i fancy it turkey dinos, oven chips and beans!

    Not sure what I'm making tonight but have got some chicken breasts out from the freezer. Think it might be stuffed breast wrapped in pancetta but not sure yet. See what I feel like later!
