    We're rescuing a home made lasagne from the freezer, which we'll have with salad and garlic bread.
    Spend less now, work less later.
  • I have diced beef and onion in SC with 1/2 tin of red pepper soup and some l/o very thick cubes of gravy from freezer. Not sure what else to do as will need to taste later re garlic etc. Also have 4 chicken thighs thawing out, was going to use jar of kung po sauce but may do something with oranges, this will be in combi micro. That will be enough meals to feed my freezer about 3 beef and 3 chicken then me for 2 days. Plenty of veg in freezer to add later. Got to decide on potatoes or rice now.

    Have made it to the shops today, mainly due to running out of loo rolls, but picked up some HP chicken breasts, pork chops and mince. All split up and popped into the freezer.

    Craving something ‘basic’ after the Christmas excess, so Cottage pie tonight I think :)

    Found a huge lump of salmon in the freezer, so made salmon en croute instead
    Note to self - STOP SPENDING MONEY !!

  • For supper I shall be having “Bangers, bacon & beans” from ‘Slow, food worth taking time over’ by Gizzi Erskine’ pg 120.

    Under normal circumstances I hate meal planning with a vengeance but normally for the first couple of weeks of the New Year I do plan meals. The main reason for this about face is that I usually have various overs that I want/need to use up. Things like dried beans & herbs, spices etc. Yes, a lot of these things will keep but the fresher they are the better and New Year seems to be a good point to refresh things.
  • Another one having cottsge pie tonight. There is some organic mince in the slow cooker with onions, mixed herbs,worcester sauce and a stock cube. DH will do the mash later. We had hm sweet potato and carrot soup for lunch

    Took a joint of beef out of the freezer and cut it into big chunks, used the last of the streaky bacon and some Christmas red wine and made beef bourginone. Served with potato dauphinose, green beans, peas and broccoli. It must have been ok because it's all gone. We did have two extras for dinner.

    I’ve also made a trifle base with raspberries from the freezer but that’s for our NYE party.
