    My OH is off work at the moment, so the only time I have to myself to post here is while he's still asleep. Lovely seeing him so much, but I missed this thread!

    Last night we had burgers, Chicken for him, No Bull 'Beef' for me. I had a sweetcorn too.

    I have a few options for tonight - I have a pack of mince, so likely a big batch of chilli or bolognese, think I'll let him decide when he wakes.

    Duck breasts from our friends shoot last weekend, will serve with a HM wild mushroom risotto, very seasonal innit ;)

    We've just had our main meal for today. Duck leg with egg fried rice and prawn crackers.
    Spend less now, work less later.

    More waffles for me last night (I'll turn into one soon) with beans and sausages before going out with OH ..on a school night too indeedy! (I can confirm I am past getting home gone midnight on said school nights :o)

    Tonight I had roast chicken with the second half of the box of halloumi fries and a tomato. The fries were still grim, could only manage a couple and the others went in the compost caddy.

    Not sure whether to take the other box back in protest, or offer them on Freegle.

    Homemade spicy cottage pie for us tonight. I have already done the spicy mince mixture, with finely chopped onion, red pepper and carrots. I have added crushed garlic and ginger, then fennel and black onion seeds, madras curry powder, turmeric and a bit of garam masala and I added a tin of chopped tomatoes.
    The mash topping will have sauteed finely chopped spring onions, butter and grated cheddar mixed in, and then given a final topping of finely sliced tomatoes and grated cheddar before putting in the oven.
    Just right for a cold, horrible day.

    I needed to do a fridge tidy so this evening will be the last slice of Yorkshire ham, 2 cold tomato and basil sausages, cold cooked chicken breast, a yummy pork pie from the butcher this morning will fill any gaps along with a mixed salad and HM chutney or pickled beetroot.

    2 boned chicken thighs also bought this morning and put in the soup maker with the last of the mushrooms, some tired spring onions, 2 mini peppers, 2 sticks of celery together with chicken stock cube, garlic salt and a shake of dried mixed herbs made a potful of very tasty soup, space created in fridge - good result:D

    I have some YS A2 milk to use, intended for a rice pud, but think we will be 2 full tonight. :(

  • I find I'm getting into an eating rut, a bit of fish or a vegetarian main and two veg sides, rinse and repeat.

    So tonight we're branching out! Trying out the No Bull 'meatballs' in a Columbian Albondigas sauce mixed with mushrooms and served over the last allotment spaghetti squash.

    The sauce is a packet one by Santa Maria Latin America Kitchen. I've enjoyed some of their other sauces, they contain actual ingredients that you would use to cook, no E numbers and not too salty. I have a low taste threshold for salt so I struggle to find package sauces to suit when I need a quick meal option.

    Thai red curry made with quorn pieces, some LO sweet potato and some frozen Thai style veg from Aldi. I was going to add some squash to it too...but on inspection it was going off (it had been in water and had black spots on it) don't have time for food poisoning in the Xmas run up so they was binned.
    Curry was accompanied with rice.
