  • Just sitting down to Roast Pork Salad for me and Enchiladas for OH - with HM Spicy Sweet Potato Wedges :drool:! OH doesn't 'do' desserts, but I've got a lovely cooling yoghurt for me for afters ;)!

    Last night we had breakfast, I had some leftover mashed potatoes in the fridge and amazed the husband as he watched me turn them into "tattie scones"

    Tonight we had curry, made from a jar from Lidl, rice, Bombay potatoes from the freezer and poppadoms. I had a chocolate mousse for dessert as I finished it I checked the calories to find that small pot had 345 calories. I could have had two walnut whips for that!!

    Last night we had steak and salad, with HM chocolate fondants for pud.

    Today is roast chicken with fruit crumble for pud
    Note to self - STOP SPENDING MONEY !!

    I have just put some pork steaks in the slow cooker with sliced onions and mushrooms, some hm chicken stock and some cider. Will thicken the sauce at the end and add a dollop of cream. To be served with a medley of whatever veg I have available.

    Not sure about pud yet, I may make Black Forest tray bake.
  • Just been getting the SC 'up & running' here too, CJ - but not quite as cordon bleu as the contents of yours ;)! Mine's got Minced Beef Hot Pot going on with lots of veg in there :j.

    It is definitely SC weather now, properly autumnal. I have really noticed how chilly it is early in the morning/late at night.

  • Another one that's dusted the slow cooker off, thrown a whole chicken in which we will have with broccoli , carrots, green beans and mash later today.

    Hopefully there will be leftovers for my lunch tomorrow and the final bits will get added to a chicken and veg soup for Tuesday's lunch.

    I will have to look that up on her site, I love 'crispy' gnocchi :D

    I did the chicken in the SC, makes it so moist, I cooked it yesterday, striped it and set the meat aside then chucked the carcass back in the pot with onions, fennel, carrots, seasoning and set on low overnight, delicious chicken stock this morning, and made lettuce and pea soup for work lunches this week :money:

    OH bought a French stick earlier so I'm defrosting some sausages for a sausage sarnie, nursing a cold and a case of cba at the moment so that will do. Might fry some onions with it and that will be about it.
