    Usual Sunday cookathon to get ready for the week ahead, I had loads of veg in the fridge and had added to it when I was shopping in Aldi and the 50% off stickers were going on.
    I made some baguettes, some soup, pear, apple and blackberry crumble and dinner.
    Dinner was chicken, a very small beef joint, stuffing, roast potatoes, onions and parsnips, carrots, cauliflower, green beans, kale, tenderstem broccoli, gravy and yorkshire puddings.
    I plated up an extra couple of dinners as I am away overnight with work on Tuesday and husband will be late home, so that will feed him and daughter.

    Making a lasagne tonight, sorting the freezer out too, top drawer is going to be things to prepare if we get another beast of the north east, ie bread, meat and some frozen veggies, possibly some frozen meals too.
    Saturday night was rump steak, diane sauce, asparagus and hm roasties. Delicious then followed by pineapple upside down cake and ice cream. Last night was sweet and sour chicken and fried rice - could be some cheeky leftovers for lunch yum yum
  • I have lots of veg to use up so dinner will probably be a red lentil coconut curry.

  • Good evening,

    So today has been a bit of pre day cooking wise for me. Cooked an oat loaf in the halogen oven for the first time today. It’s one of those underused gadgets in my kitchen that I’ve vowed to use more. Turned out blinking lovely, especially with just butter!

    With a set of 6 12hr shifts starting from tomorrow, I’m trying to get a jump ahead, so have 3 cottage pies in the oven, done in the foil trays, one for tonight and then 2 for the freezer. Got a rice pudding cooking in the slow cooker too. Never cooked it using the SC before so hoping it’s going to be good.

    I’m slowly getting to grips with this CFO but cannot wait for daughter #2’s visit at the weekend. Her first time home since starting Uni in Sept. my girls are at Uni’s 500 miles apart so it’s moments to treasure.

    A bit of a hotchpotch tonight.

    A butcher handmade pie with mashed swede for DH, I had Halloumi fries and a small steak I found in the freezer.

    LO Mixed fruit crumble and cream for pud for DH - I'm stuffed :rotfl:
    Note to self - STOP SPENDING MONEY !!

    I am stuffed up with a stupid cold that is now at 'sniff constantly, head full of cotton wool, can't taste a flipping thing stage'. I'm actually ok in myself so long as I'm dosed up on cold and flu tabs so I'm more frustrated at not being 100% than anything. Bless OH, he came in from work and took pity on my, throwing some chips & scampi in the oven with beans.

    I think OH is having something with curry and rice tonight based on last nights conversation. I have just got the LO portion of a disappointing Balinese curry out of the freezer - I watered it down a bit to stretch the sauce and cook the Quorn chunks but it ended up a bit tasteless and a portion has been lingering in the freezer ever since as I am loathed to throw out otherwise perfectly good food.
    Since i can't actually taste anything anyway, I may as well make use of this cold and have that tonight.
