    Bit of a fridge clear tonight, rescued a pair of feather steaks from the freezer, will velvet them then slice them up and add some random veg, spring onions, half a red pepper, broccoli (mainly stalk) 2 sad carrots and a bendy leak and turn it into a chilli/ginger stir fry with noodles for DH
    Note to self - STOP SPENDING MONEY !!

    Another day of doing here today, no idea where the day has gone. Sweet potato lasagne tonight lovingly made by Asda ...was actually very nice, although I could easily make it myself (OH liked it so I might have a bash) with some petit pois.

    Have spent the afternoon putting sofas together, am shattered but at least we have comfy sofas to sit on now.

    I'm splashing out a bit today, it is our anniversary and I am doing a cheese and charcuterie board using as much local produce as I can get, plus the usual olives, grapes, walnuts, figs etc, a bottle of decent wine and port - still cheaper than a meal out ;)
    Note to self - STOP SPENDING MONEY !!

    Seventh Anniversary 1,000 Posts Name Dropper
    Last night turned into pork not chicken once defrosted, with mushrooms, onions, sweetcorn, stock and some phili mixed in served with rice, used up odds and sods :p
    Lunch is the other half can of tomato soup and toast and tonight I have some of the pork leftover which I might have with a baked potato
    Determined to get the freezer down a bit to restock. There’s still frozen bread in there which I put in when the beast of the north east came, no bread for miles! :cool:

    Lunch today will be more soup - leek and potato this time. Chicken and veg stir fry for dinner.

    Well how about that ..... it's our anniversary today too. We'll be dining tonight at a local gastropub we both like, to celebrate our 32 lovely years together. Aww.

    • Took some minced beef out of freezer yesterday - I buy trays of it in ASDA as part of their '3 for £10 Offer' - then divide the trays into 250gm amounts to freeze
    • Have some frozen mixed peppers - frozen the day we went away for a long weekend to prevent them becoming unusable in the salad drawer :wink:
    • Will make a 'mildish chilli dish' tonight using up some red onions and garlic cloves / past their best cherry toms / tinned toms from my stash / cheapie Tesco 'shrooms / paprika / cayenne / chilli powder / cheapie red kidney beans.
    • There's usually at LEAST enough left over for another portion (sometimes two portions) to stick in the freezer - will get used as a jacket spud topping
    • Also got some home-prepped Garlic Ciabatta in freezer to defrost to go with the chilli
    • 250gms of minced beef for two people with one/two portions left for another day - I'm quite pleased with that :wink:

    I've got the BBC spicy root veg and lentil casserole (link to recipe!)

    One of those golden recipes that is:
    - Cheap (only need to buy root veg and then there is plenty left for soup!)
    - Healthy
    - Delicious
    - Super easy - I've just shoved everything in the slow cooker, we will have it with flatbreads when back from the gym at 9pm tonight :)


    Lunch is leftover veggie chilli, rice and sliced green beans, currently defrosting on the side. We don't have a microwave so I'll just heat it all up in the pan and eat with a spoon!

    Happy anniversary IM and CJ...err I mean to you and your respective OH's not to you both as a couple...unless you are....oh this is all getting very Jeremy Kyle :o:rotfl:

    Not sure what we're having here, I keep changing my mind. We have some more veggie Kiev things or OH is talking about trying to make veggie mince and tatties....hmmm,,.choices....
