    Had a late breakfast and a late lunch..... was planning on doing myself a Carbonara for supper but looking through the fridge changed my mind to doing a Kimchi fried rice (Kimchi bokkeum-bap) from Our Korean Kitchen (pg. 31) by Jordan Bourke and Rejina Pyo

    Oh my that looks heavenly (googled it).

    This is normally the sort of thing I’d eat on a Saturday evening but yes it’s really good especially when the yolk of a soft fried egg mixes into the rice :P

    Today we finished eating the chicken I roasted at the weekend, chicken noodle soup using stock and the last bits of meat from the carcass for lunch and tonight Cheapie Chicken Biryani recipe by Elaine of Mortgage Free in Three, but used the last of the cold chicken, cooked it in the Remoska.

  • We've just been to the pub for supper which was sausage, mash and peas in gravy and served in a humungous Yorkshire pud, totally delicioso and just what we needed after the past few days hectic packing of the last few bits because we move tomorrow Hoorah! so, after weeks of eating from the freezer and store cupboards to use up what was in them as of Friday when we're finally in the new home I shall be able to start cooking from fresh again which I am really looking forward to and have been fantasising about plates full of lightly steamed fresh veg in my idle times. I shall have a whole high street to play with rather than just the Co Op and One Stop and there is a proper greengrocer and a proper butcher in that high street Oh JOY!!! I shall start posting again from the 'other side' xxx.

    Whenever I go away I seem to comeback with my cooking batteries recharged.
    Yesterday I made a big vegetable lasagna to use up some peppers and aubergine I bought yellow stickered last Thursday. I also used some blue cheese in the white sauce. Six portions for the freezer and daughter had one yesterday and today. Whilst that was in the oven I cooked a chicken and roast potatoes. I had the last piece of nut roast from freezer, husband had chicken. With roast potatoes, green beans, broad beans, carrots and tender stem broccoli.
    Today I had egg, vege bacon, sliced super six tomatoes and actifry french fries. I made husband a chicken and veg omelette, with salad and French fries.

    Got some mince out to defrost, tomorrow it's cottage pie and cabbage (mine will be made with quorn)

    I see that DH has got some HM Thai Chicken curry out of the freezer, so we'll be having that.
    Spend less now, work less later.

    Last night was just random bits out of the fridge and freezer, a picky tea but I did enjoy it! Lunch today is half a can of tomato soup and a muffin with probably cheese in. I feel the need for a warming soup!
    Dinner, I grabbed some chicken out of the freezer this morning and that will be with rice tonight – maybe curry no idea ha

    Last night was HM vegan chilli with rice. Was just DD and I so I packed the remainder into three boxes, with some frozen sliced green beans, for lunches today, tomorrow and Friday.

    My best friend is moving to Bangladesh for 6 months for work (she works for a non-profit!) so tonight I'm going to pick up some wine and other ingredients to cook her dinner. I'm thinking I might just do mushroom bourgingnon with rice and something green. Then fruit for after. Original plan was falafels, salad etc. but doesn't really seem like the weather for it!!
  • Lunch today will be chicken noodle soup using up the last of the chicken from yesterday, though some has gone into the freezer for a stir fry later in the week.

    Tonight's dinner will be hm pizza, hm coleslaw, wedges and salad, maybe some garlic bread too, I think there's one in the freezer somewhere...
