last night ended up being fish and chips. The fish was too big a piece for me and pretty greasy so I only had a small bit of it and filled up on the chips.
I had a hospital appointment so him indoors went shopping and bought Tesco paella for tonight, Tesco finest pepper sausages for another night to have with lentils and their smoked turkey breast roast to use to make fajitas on the weekend.
this is after him telling me I buy too much and don't think about what's already in the fridge/freezer.

I just looked back at my post above and marvelled at the change in the weather. Because it's so hot I decided to make some things to eat with salad for the next few days so this Feta and Herb Phyllo Tart is in the oven and I'm going to make these Cheese and Spinach Phyllo Rolls with the rest of the packet of filo and some spinach that needs using up.

Tonight I’m using up a pack of potato gnocchi and various veg (courgette, aubergine, red pepper, red onion, garlic, tenderstem broccoli, asparagus and halved cherry tomatoes) all from the community fridge to make a random kind of Mediterranean bake thing. I’ve already air fried the gnocchi to add to the veg at the end as I prefer them golden and crispy.

For those that like sausages I highly recommend the Tesco finest pepper ones. A good hit of paprika (I think!) with some spice but not overwhelming. OH did a lovely job of cooking them with pork belly, lentils, tomato and shallots. As always there was such a pile that it did for 2 dinners with some left over. In ancient times I would have packaged that up and taken it to work for lunch but that doesn't happen now I'm retired.
The smoked turkey breast roast was nice too but for fajitas I'd prefer to with just regular meat - boned, skinless chicken thighs work nicely - and add my own spices. But it was a fairly simple dinner in the end as the roast was sliced into bits and then we assembled our own at the table with the wheat tortillas, 2 types of salsa, guac, sour cream, grated cheese and lettuce. Again there was enough for a second dinner and still some nibbly bits in the fridge. Shame there aren't any tortillas left over as it's been ages since I'm made myself huevos rancheros.
Tonight will be a lamb neck grilled with new potatoes. There's lettuce and cuke in the fridge so I made force the OH to have a salad as well.

Been leaning heavily into salads as it's just too hot for anything else though (thankfully) it's cooled down a bit so we're having salmon risotto (OH's signature piece).
Tomorrow is buckwheat crepes with tuna and sweetcorn - we have a lot of eggs & milk, and some buckwheat flour that needs using up

Lots of salad here too. With ham, with store bought cooked chicken, with burrata and tomatoes, with avocado.
And while I normally am perfectly happy with the tomatoes from Lidl or Tesco I happened to be in M&S and they had Isle of Wight tomatoes - by far the nicest I've had this season. I got the little yellow/red mixed baby plums. Full of flavour.
I'll be treating myself to more of those - especially as I just got a £4 apology from M&S when I emailed to tell them about the misleading packaging on their lemon sparkling soda drink. I don't normally buy anything for myself other than fizzy water as I don't like soda as it always contains artificial sweetener. And the M&S pack clearly said on the side "no artificial sweetener". And yet when I got home and took the tins out of the pack I saw that they do in fact contain sweetener. Granted it's stevia which isn't completely artificial but it isn't a sugar.
But anyways - tonight we have some spicy sausages that someone (OH I'm looking at you!!) will be cooking to have with yet more salad and a garlic flatbread. And OH has bought himself a new toy - a charcoal smoker thingme. And he bought a lovely looking chicken from our meat guy which he will be attempting to smoke, possibly tomorrow.

fyi - M&S have sent me a £4 voucher for the sweetener issue. I've told them I'll use that value for the food bank. OH has used them all up without me gettting a look in…..
And tonight Mr Lidl is doing the dinner. The deluxe pasta parcels (like ravioli??) spinach and ricotta version. I'll melt some butter and add some basil. Might ask him what cares if he wants parmesan or mozzarella on top.

weekly market shopping done so we're having lamb's liver this evening with bacon and mash. OH will have gravy. he also got some plaice for tomorrow and potato slices. And some pork loin chops which he knows I love. likely have rice and courgette with those on the weekend.
I'm somewhat limited currently on kitchen duties due to slicing my finger the other day chopping chives. Oh dear, I can't even wash up! Woe is me!!!
