    it was the OH doing chicken liver risotto last night. one of my favourites but the livers broke up more than usual that OH puts down to them being too fresh. They were fresh from our meat guy rather than frozen from Watrose. One portion left for me at some point.

    tonight was going to be swordfish steaks but given the OH has been cooking the last 2 nights and looking after me with a poorly tum I've said I'll cook tonight so it's a pork roast with new potatoes and roast parsnips. I might see if the tiddly butternut squash is worth having - it's gone a bit wrinkly so might be beyond use. If there's a couple of slices I can always put them in with the parsnips. I think there's apple sauce in the fridge which will please OH. It's store bought so not what I would normally eat - I like proper home made sauce or apply chutney neither of which we have currently.

    I found a box of Freekeh in the cupboard today which had gone, ahem, slightly past its best before date so decided to use it up today and tomorrow. The box said it made four portions and that it could be eaten hot or cold which sounded promising. I duly followed the directions and ended up with a lovely bowl of chewy grains that have a mildly nutty flavour and a litre of very pleasant tasting cooking water which I'm planning to use as stock tomorrow or Tuesday.

    So for dinner tonight I had more of yesterday's vegetable stew, a portion of freekeh, petits pois and sweetcorn from the freezer and a dollop of spicy turnip. You can just see the freekeh at 12 o'clock in this photo, it looks rather like brown rice grains. (Apologies for the steam clouding my phone lens.)

    Last night's pork roast was lovely and there's enough left for this evening. OH has requested jacket potatoes to go with it which is grand. Nice and easy.

    I did some batch cooking yesterday and made these "Parsnip, leek, sage and blue cheese pasties" from the January issue of the BBC Good Food Magazine. I can't give a link to the recipe here as it turns out it's only available electronically on their app but I did manage to copy the image so that you could see the originals for comparison.

    The recipe said it would make 6 but after I'd rolled out my pastry for the first time I found it would easily give me 9 of the circle size they specified, plus there would be a lot to reroll, so I ended up cutting out enough to make 6 with 1 circle on the bottom and another on the top and still had enough pastry and filling left over to make a one crust pie in a 7 cm pie plate.

    So that's what dinner yesterday and lunch today were with veg from the freezer and salad.

    They look great @goldfinches I have some blue cheese in the fridge, unopened but best before 12 th January. I'm tempted to cook with it. Otherwise it will just go in the bin.

    We just had jacket potatoes and salad for dinner. A Monday night staple. I did make some flapjack with some muesli and I made my daughter some gluten free focaccia bread rolls. (Just used a bread mix and added rosemary, roasted tomatoes)

    tonight will be chicken thigh filets cut into chunks to be cooked up with mexican spice and we'll have them with boat tortillas* and lettuce, salsa, guac and sour cream. We've got some refried beans as well but I'm not eager to add that in as what we've got should be sufficient.

    *maybe you've seen these advertised - they are wheat tortillas but rather than being flat they have been formed into a small boat shape presumable for those that don't know how to make a tortilla wrap. OH has often said they looked a good idea and I saw them somewhere cheap so thought we could give them a go. Frankly I think it will be difficult to put a lot in them so maybe it will slow down our inhalation of food.
