    That sounds nicely summery!!

I went out to lunch yesterday with a friend (Harvester, £8 for 1/2 roasted chicken with chips and the salad bar).  I didn't eat all my chicken so happily brought it home.  OH had purchased a small lasagna from Tesco so he had 80% of that, I had a small portion with the LO chicken and a sliced tomato (one of those lumpy heritage type - lovely flavour)

I'm feeling absolutely flattened by the heat here today so had a wrap with salad bits, coleslaw, walnuts and pickles followed by an ice pop and then a long cold drink.

OH did lemon sole last night with boiled jerseys (to be clear - the potatoes, not the shirts) with a small side bowl of samphire.

He said he'd be doing lamb's liver tonight but I've checked the BBD is nicely in the future so I'm off to Lidl to get some lettuce, ham, maybe some of their nice buffalo mozzarella.  Need to pick up some more spring onions as the couple left over had wilted despite being in a glass of water.  A friend gave me a cuke from her garden so OH can have that as well.  (love the smell but can't eat them).  Baguette, unsalted butter, might look at their tomatoes (we do already have some but I got through them quite quickly.)

OH and just an idea - I had a tin of Tesco 5 bean salad in the cupboard which we used the other day.  It's a couple of different types of beans plus green beans and chickpeas, no lentils.  I rinsed it well then put it in a boil with some of the chopped spring onions, and a vinaigrette of olive oil and white wine vinegar, pepper, seasalt, dried basil and some dried persillade picked up in France (mix of parsley, tarragon, chervil, garlic).  I topped it off with a lot of really ripe tomatoes cut into bite size chunks and shredded fresh basil.  The tomatoes etc were left on top so as not to "cook" in the vinaigrette.  OH always grimaces when I put such things on the table but is also very good at finishing it off and leaving me with next to nothing.   I also had a bowl of undressed mixed baby greens so those went on the plate first and the bean salad on top.  I didn't fancy a lot of carbs so we only had a Lidl demi baguette but that was there just to mop up the salad juice.

Thinking more about this I might get some mushrooms as some of those mixed with tomatoes and a vinaigrette are really nice.  Again just as a topper to whatever salad leaves are available.

I had quite a lot of veg to use up so earlier today I made a parsnip, sweet potato, carrot, mint, parsley and pearl barley tagine with chopped preserved lemons and green olives. It tasted a bit bland despite having ras el hanout and turmeric in it so I added a couple of teaspoons of curry paste, which has made it a bit more interesting. Will reheat later for dinner, though actually it might be just as nice at room temp as more of a salad.

I made a sausage casserole and a crustless quiche, both as meal prep.
