I had black-eyed bean burgers on top of spiced bulgur and roasted vegetables since it was so chilly and wet here today.3

Fish pie with apple pie (not home made) and custard for dessert.2

I'm assuming the custard is for the apple pie and not the fishy one.itsthelittlethings said:Fish pie with apple pie (not home made) and custard for dessert.
Schnitzel for us tonight also not home made (Lidl). It's an easy option that was added to the freezer before we went on holiday as I knew we'd take a lot of time to get over the jet lag. Also it's been raining today and who wants to go out in that??? Think there's a tin of potatoes lurking in the cupboard. I'm not a fan but again - it's easy.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. I made some flatbreads topped with greek salad, hummus, and falafel. Husband had some chicken shawarma with his. Sat in the garden to eat.3

Any ideas for a vegetable side dish to take to a BBQ? Needs to be eaten cold as I've got to make the night before.
I thought about a bean salad, but any inspiration appreciated3 -
I’m very boring but I do like a proper Greek salad as a side dish at a barbecue. All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.3 -
How about tabouleh? That gets better the longer it sits and you could chop the parsley and mint at the last minute. Or a potato salad with a vinaigrette dressing, that would mean it could sit around at room temperature with no problem.
I made an onion tart from Anja Dunk's Strudel, Noodles and Dumplings this afternoon which was very successful largely due to using a bread dough for the case rather than pastry. The dough was much easier to roll out and ease into the dish and didn't need to be blind baked either. Here it is.
