    @goldfinches - we could really use one of your storms please!!  OH has some boned chicken thighs, a harrisa wrap kit, taramasalata, greek flat breads, and lettuce & tomatoes.  So something Mediterranean

    Whoops, I've been so busy today that I didn't look at the site until a few moments ago, sorry about missing you earlier. When I'm in need of inspiration I usually look at the Ottolenghi site here so perhaps give that a look.

    I made pasta shells with some vegan butternut squash and chilli pesto (55p from a jar, OMV at Asda) with some yellow-sticker cherry tomatoes (17p) thrown in. Made 2 big portions for about £1.25.

    I was thinking where on earth one might get vegan butternut squash and then realised you meant the pesto....must engage brain before reading.....

    Oh, that made me giggle! I made tomato and garlic mushrooms which I ate with the heel of a seeded loaf followed by a mixed green salad.

    I had a bit of a scrabble in the freezer this morning and excavated a roll of puff pastry so decided to make a caramelised onion tart. I then had a bit of a fridge sweep and managed to use up the rest of a box of mushrooms, some olives, a couple of pickled jalapenos, some harissa and a container of ricotta which had been hanging around for a while. Here's the finished effort.



    I know it looks a bit like the cat's been sick but that really is ricotta with harissa stirred into it that I dolloped on top there. Anyway, it is delicious and I had a large piece for dinner with a nice big green salad.

    I made a pan of asparagus and pea risotto tonight, using up several bits from the community fridge. It was delicious and I went back for second helpings, but there’s still enough for tomorrow night.
