    I know it looks a bit like the cat's been sick but that really is ricotta with harissa stirred into it that I dolloped on top there. Anyway, it is delicious and I had a large piece for dinner with a nice big green salad.
    Yes but everyone knows that looks aren't everything!!!  (& it doesn't look like cat sick to me!)

    @Brie - thanks for that, I'll keep firmly saying it to myself.

    Anyway, I had another piece of pie with the other half of a humongous salad I made for lunch followed by the last bit of the stewed rhubarb and a decaf coffee. I'm off for a walk and am taking my camera in case I see the roe deer that I spotted yesterday again, fingers crossed.

    I had a lovely mooch around a truly fab garden centre with my eldest daughter today, and treated us both to a Buddha bowl salad lunch so wasn’t very hungry for any dinner tonight. My appetite has been really poor for the past six months or so which is great for the waistline but not so great for my health so I must try harder! My nails have been flaking and splitting, and my hairbrush has way more on it than I think it should.

    I whipped up a pan of watercress soup tonight using ingredients from the community fridge, and it was more than enough to hit the spot.

    If anyone is out and about on the Oxfordshire/Buckinghamshire borders, I heartily recommend the Preston Bissett Nurseries and Garden Tipi Cafe.

    Also going to make a leek risotto for the freezer to use up the leek that’s in the fridge.

    steak and jacket potatoes with asparagus.  shocked at the price of the steak $66/£40 for 4 sirloins.  I realise now that being in Canada they are cut differently than in the UK so we didn't actually need 4 as these are humongous.  On the flip side the asparagus is stupidly cheap.  $4 for a 1.5 pound bundle.  So a healthy portion for 4 people for 2 dinners.  All for slightly more than we normally pay for enough for 2 of us for 1 dinner from Lidl.

    I contrived a meal from stores by making a red lentil dal, bulgur wheat and vegetables from the freezer.

    You can make a cheap roast with chicken breast, parsnips, potato and carrot with a little bit of olive oil. That's about 4 meals for less than £10.

    I made a lasagne last night, well not one but 3. A vege one for me. A gluten free one for daughter and a run of the mill one for husband. 
    Not as hard as it sounds, just used a load of roasted veg with a tomato sauce and made mine up. Fried off the mince and added to remaining sauce.  We all had gluten free cheese sauce.

    We had it with salad.

    I made these Crispy Black Bean Burgers which were very easy and quick and as I didn't want to buy a bottle of ketchup to get the 1 tablespoonful for the recipe I used some smoky tomato paste from a jar that's been sitting around in the fridge. I also stirred some more of the tomato paste into a couple of spoonfuls of sour cream to make a substitute for the mayonnaise used to dish up at the end. I ate it with a big 'use it up' salad and then had half a mango, which was finally ripe, for pudding.
    Here are the other three burgers in the pan surrounded by all the crispy bits which I love so I did overdo them on purpose.



    I think the recipe is quite forgiving and flexible because I only had 60g of dried breadcrumbs and it didn't seem to make any difference nor did my tomato paste substitution. I found one burger plenty so it's also quite good value if you already have the spices and pastes in your cupboard.

    I think they look great @goldfinches. I used to have a recipe for a bean burger kyiv, that used black beans and was coated in breadcrumbs and was delicious.  Might have a go at recreating as I know I dont have the recipe book anymore.

    Tonight we had pitta breads, I had falafel in mine, husband had chicken shawarma. With greek salad, tzatziki and baby potatoes made into Greek potatoes.
