OH didn't get round to doing the tuna last night as intended and we had a taxco steak pie instead from their dinner offer range. There was a mixed veg and potato included which was really quite nice with a minted sauce over things - and I normally don't like minted veg, but this was nice and subtle.
So tonight he's doing the tuna and has prepped it - said it was so fresh it could be eaten raw and that the solid chunk cut like it was butter. So I made some home made fishcakes, new recipe (cheesy fishcakes). Added coleslaw and a tomato and cucumber salad. They were really nice but next time I'd add more cheese

Burns Night has come early. Haggis, mash, carrot/swede mash, pigs in blankets left over from Christmas (been frozen!!) No doubt he'll want gravy (which is fine as he's doing dinner). We've got some chocolate puds - those microwave molten middle type and there's cream to go with. Serves 2
Potatoes (I used 2 medium) recipe says 450g
3 cloves garlic - crushedBasic fish pie mix (or tin tuna x 2)
50g cheese (recipe said 30g but I found this not enough)
Half lemon - juiced (recipe says add zest but I never do)
Half stock cube
Tablespoon breadcrumbs (more or less to your taste)
(I also added 2 teaspoon chia seeds, which you can see, but this is my choice and not in recipe)
I don’t peel potatoes - chop into 2cm cubes, add to pan with garlic. Cook till almost soft. Add fish pie mix. Cook till potatoes soft and fish cooked through (5 mins more approx)
Drain and leave for 5 minutes to steam in hot pan (dries it out)
Mash roughly - you need little chunks still
Add stock cube, generous knob of butter, cheese and breadcrumbs
Add lemon juice
Season (I never add pepper but that’s to taste)
Make into roundish patties about 1 cm or so thick. Drizzle with little olive oil.
I cook in air fryer but I guess oven same. I cook 185 for 20 minutes, turning halfway.
And you’re done
I only used half the mix and the second half I added sweetcorn, a tablespoon of cream and press into a cake tin. Sprinkled cheese (you could use mozzarella)on top. Next time (if I have leftovers) I'll try a little sage and onion stuffing on top. Baked 15 mins. Cheesy fishy bake.

Todays offering is Chicken in a paprika and cream sauce, served with roast potato slices with thyme and garlic cabbage. The image isnt blurred, its the steam!

Lobster!! We were in Aldo a couple of weeks back and they'd obviously got their Christmas lobster order late. It was in the seasonal section and discounted but it was practically a whole freezer! £3.99 each.
So a bit of a seafood feast - a lobster each, a prawn ring that we'd bought for Christmas and never got round to, bread, salad, mayo, lemon.
