The brisket and assorted veg that were cooked with it were all very very nice if I do say so myself. We had just 3 small slices left over so those were chopped up and added to the slightly reduced stock along with most of the veg chopped up as well (I say chopped but I actually used the kitchen scissors.) I had removed a fair amount of the onion as that was in fairly big sections and him indoors doesn't do onion like I do. Anyways the resulting soup was lovely served with thick slices of sourdough bread. (YS from Mr T)
Tonight we're going out to an Indian restaurant. I'd booked it nearly a month back and it was only this last weekend that I received 3 panicky emails from them to say even though this is a Tuesday they won't be doing their normal £19 Tuesday special. Frankly I hadn't expected them to given it's Christmas Eve. But I'm sure some people will grumble and likely cancel as a result. Trying to think of the things one might do with the excess leftovers.....turkey and gammon being the main culprits.
So sandwich are obvious. I've got some of those bake your own baguettes but also some wraps as I prefer those for sandwiches.
Thought also of a nice caesar salad with chunks of turkey and chopped bacon lattice to add in as well. Gammon can be sliced and served as part of a breakfast instead of bacon or sausages - but speaking of which we have lots of pigs in blankets left as well - they do nicely at breakfast too.
And as I have wraps I could do some fajitas.....there's tomatoes and avocado available so just like the salad all I need is some lettuce of some sort....

We are having the traditional 'cold meat and potatoes' - half the leftover gammon (my dad took the rest), so it may well be that, along with leftover carrots reheated and maybe some broccoli as well. Quick, easy and takes very little brainpower.2026 Fashion on the Ration - 0/66 coupons used1
