Tonight I made a chicken mince dish based on something I had seen on social media.
It was chopped up small /or grated, carrots, onion, red pepper and courgette, with chicken mince, stirfryed together with some chilli and pepper seasoning and soy sauce. This was supposed to be added to rice noodles but daughter had hers over some oven chips and husband had his in lettuce boats. With salad and chips.
I had mozzarella and tomato with some garlic bread and extra salad.2 -
Last night I had a mish mash using up left overs
Prawn cocktail, crackers, Brie, Cheddar, Salad, crisps, pickles, satsuma

We had turkey left from Sunday dinner. We bought two crown in the Boxing Day reductions for a mere £4 something each. It did a roast for 3 Sunday, a roast for DD Monday night, sandwiches on HM focaccia w/ stuffing and cranberry for us w/ wedges. So tonight the rest went into a turkey and leek pie served with cheese and bacon stuffed potatoes and spinach 🙂. It was lovely.4

Finally got to "the fish guy" (that's the actual name!). He's a wholesaler but is open for retail 2 short days a week. What an astounding array of fish!!! I got some very nice trout pieces that will be going in the freezer so I have them for slow breakfasts. And OH picked out a nice chunk (a brick really) of tuna that he intends to cook tonight and serve with fried onions and peppers. Not sure if it will go on rice or mash.
I will try to get him to dress more casually next time we go. He's a dapper chap with his green tweed jacket, maroon trousers & pork pie and brand new and expensive chelsea boots. The place had water running over the rough floor and I was worried he'd ruin the boots. And then I noticed his jacket was almost leaning on some of the trays of fish when he was looking through. I won't be surprised if he starts having cats follow him everywhere.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. Last night I had the second Kiev from the pack, with crispy slices potatoes and salad. Made figs baked in honey and cinnamon also

We had couscous (packet mix but added things that needed using up), home made yogurt flatbread, greek salad, halloumi and lamb kofta. I also used the last of the yogurt to make a dip, with grated cucumber and mint sauce.2

OH didn't get round to doing the tuna last night as intended and we had a taxco steak pie instead from their dinner offer range. There was a mixed veg and potato included which was really quite nice with a minted sauce over things - and I normally don't like minted veg, but this was nice and subtle.
So tonight he's doing the tuna and has prepped it - said it was so fresh it could be eaten raw and that the solid chunk cut like it was butter. Looking forward to this!!!I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. If you need any help on these boards, do let me know. So I made some home made fishcakes, new recipe (cheesy fishcakes). Added coleslaw and a tomato and cucumber salad. They were really nice but next time I'd add more cheese
