  • I'm feeling very pleased with myself for making a veggie bolognese with lentils and using up some fresh pasta I found languishing in the fridge as well as an end of parmesan and some leftover roasted cabbage followed by the last apple with the end of a jar of peanut butter. There's enough bolognese for tomorrow too if I haven't frozen solid overnight!

    OH did lamb shanks marinated in red wine for dinner last night - and while lovely I couldn't eat my portion and what remained got binned.  I do wish he wouldn't but he isn't always good at reimagining leftovers.

    But that makes tonight a light meal - he has some corned beef to make sandwiches.  I had said I was going to have egg mayo ones but realised that I've got to chicken tenders left from the other night and have some tortillas so will make a couple of small wraps for me.  And then freeze the rest of the wraps to keep them for some mexican delight in the near future.

    Tonight I made a chicken mince dish based on something I had seen on social media.

    It was chopped up small /or grated, carrots, onion, red pepper and courgette, with chicken mince, stirfryed together with some chilli and pepper seasoning and soy sauce. This was supposed to be added to rice noodles but daughter had hers over some oven chips and husband had his in lettuce boats. With salad and chips.
    I had mozzarella and tomato with some garlic bread and extra salad.

            We had turkey left from Sunday dinner. We bought two crown in the Boxing Day reductions for a mere £4 something each. It did a roast for 3 Sunday, a roast for DD Monday night, sandwiches on HM focaccia w/ stuffing and cranberry for us w/ wedges. 

            So tonight the rest went into a turkey and leek pie served with cheese and bacon stuffed potatoes and spinach 🙂. It was lovely.

            Finally got to "the fish guy" (that's the actual name!).  He's a wholesaler but is open for retail 2 short days a week.  What an astounding array of fish!!!  I got some very nice trout pieces that will be going in the freezer so I have them for slow breakfasts.  And OH picked out a nice chunk (a brick really) of tuna that he intends to cook tonight and serve with fried onions and peppers.  Not sure if it will go on rice or mash.

            I will try to get him to dress more casually next time we go.  He's a dapper chap with his green tweed jacket, maroon trousers & pork pie and brand new and expensive chelsea boots.  The place had water running over the rough floor and I was worried he'd ruin the boots.  And then I noticed his jacket was almost leaning on some of the trays of fish when he was looking through.  I won't be surprised if he starts having cats follow him everywhere.

            Tonight we just had quiche and salad.  Husband had a few chips with his, I had some bread.

                    We had couscous (packet mix but added things that needed using up),  home made yogurt flatbread, greek salad, halloumi and lamb kofta. I also used the last of the yogurt to make a dip, with grated cucumber and mint sauce.
