Back from holiday and I was craving veg, so popped into aldi and added chicken and veg to the milk and bread.
Cooked the chicken in the airfry and it was really good.
Tonight it will be airfry fish and chips and probably tinned peas.3 -
There is some homemade tomato and lentil soup, fresh homemade bread and some cheese, stewed apple and yoghurt. We are going to see the play Sweeney Todd, so red soup seems appropriate.Later. Thank goodness we didn’t have meat pies.4

I’m making roasted red peppers, stuffed with minced beef, diced mushrooms, onion, rice and spinach.2

Chicken and mango curry is bubbling away in the slow cooker. I'll chuck some rice on the hob at some point this evening for a relatively easy meal.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173

OH has some lemon sole that will be presented with potatoes.
Meanwhile I've cleared the squash out of the fridge. There was a massive one - no idea what it was but one with a bulbous end and a long neck which the OH described as a comedy peanuts. Well the crucial bit has been peeled and chopped into uniform cubes and popped in the freezer along with some left over carrots ready to be souped. Whatever it was it was lovely simply halved and roasted in it's skin (edible) and there was so much that did for 2 dinners and this is the leftovers. Sadly I gave up on the bulbous (seedy) bit and binned it. It was free so I don't feel too too guilty.
Meanwhile I've asked my Bro overseas for honeynut squash seeds as a birthday/Christmas present as they are petite, sweet and lovely!

Busy morning here, I have finally emptied, defrosted and cleaned the tall upright freezer in the garage. It was a long overdue job, but now I have seven lovely empty drawers and this time when they get refilled I will be more organised and will keep an up to date inventory (well, that’s the plan!)
I’m currently cooking a large pack of minced beef, some as fillings for roasted red peppers and some as chilli con carne, all of which will go into the freezer for meals next week. I’ve defrosted a couple of Thai salmon fishcakes which we’ll have with chips and salad tonight.2 -
Cooked a big gammon joint, made traditional sunday dinner accompaniments. Loads left.
Sent two days dinners to the inlaws.
Made an apple crumble with a flapjack topping but the jury's out on if I would do it again. Had it with custard for pudding.2 -
Made a big batch of veggie chilli in the slow cooker yesterday which made enough for 5 extra portions so into the freezer they have gone for another day.
Dinner tonight however is thai chicken meatballs from the freezer that I made a couple of weeks ago. Will serve with rice and broccoli for some greenery.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173
