  • We're out to our favourite Vegan Restaurant for lunch today so that will be our main meal and I've made some of Hugh FW's Mexican Black Bean and Tomato Soup which we'll have for supper this evening with some Greek yoghurt, fresh coriander leaf, grated cheese, guacamole and tortilla chips, a feast if ever there was one. I think all we'll need after that lot is our cup of coffee!

    I've defrosted some chicken stripped from an earlier Sunday roast and will make it into a puff pastry pie for tonight's supper, probably mixed with veg and gravy but maybe with leeks or sweetcorn in a cream sauce - haven't quite decided which yet.


    I had to nip out from work yesterday lunchtime to take some eBay parcels to a Hermes drop-off point, which was inside a small Co-op supermarket nearby that I haven't ever visited before. They had a whole chiller filled with YS items at fantastic reductions so I stocked up on some packs of mixed broccoli/carrot/new potatoes at 10p a bag, punnets of nectarines at 20p and some swede at 10p each. Some of the veg will go with tonight's pie, and I will halve the nectarines, sprinkle with brown sugar and grill them. Swede will be cooked, mashed and portioned up for the freezer. I do so love an unexpected bargain, it makes my day :)

    Eighth Anniversary Combo Breaker
    Vegan, cheap and tasty sweet and sour stir-fry for us two tonight.
    I buy own-brand frozen soya chunks and use a quarter of a pack for the two servings. Steam about eight chunks in a sieve over a small saucepan with the lid on, then slice the chunks into three and add to stir-fried peppers, celery, courgette, carrot and any other veg I've got suitable. Add half a can of chick peas (store the rest in water in the fridge for another meal in a day or so) and a whole jar of budget brand sweet and sour sauce (35p) which then gets zinged up with a couple of heaped teaspoonfuls of lime pickle (Pataks is usually around £1 a jar, nice chilli-lime kick to it and keeps well in the fridge). While all that gently heats through I bung 125g wholewheat couscous into a small pan and add 190ml boiling water, stir and leave with lid on for a few mins. Much quicker/easier than cooking rice and it soaks up the sauce nicely while you eat.
  • Tonight's dinner will be hm steak and ale puff pastry pie, peas and local new potatoes.

    Use it up tonight, flat mushrooms topped with spinach and cheese, halloumi chips from Aldi, spicy chicken, cous cous with stir-fry courgette, pepper and onion, Greek salad, hummus and pitta bread. Enough left for lunch.
    Ice lollies for after.

    Steak and celeriac chips with salad for me, normal chips for DH - date Night has been temporarily moved to a Saturday;)

    Need a decent lunch today as don!!!8217;t know when we will eat tonight so its a baked potato with cheese and beans, the best potato topping i think! With a bit of smoked sauage the other bit of the smoked sausage will be used in the pasta salad for tomorrows picnic !!!8211; cheeky crumpet for breakfast!
